Caramel & Toffee Skillet Blonde Brownies are chewy bars loaded with chocolate covered toffee bits and gooey caramel, all baked in a skillet for a rich decadent dessert. I can’t think of anything better to treat yourself to on a chilly fall day.
Speaking of chilly days, weather doesn’t seem to be on my side lately. First I had to cancel a photoshoot due to freezing temps and 45 mph winds. Now the football game we are attending with friends this weekend in an outdoor stadium is showing rain in the forecast. Rain! Ugh, I would much prefer snow. The thought of sitting through a three hour game in freezing rain to watch our team who has been performing less than stellar isn’t seeming very appealing at this point.
I guess I just need to focus on the positives here. I get to hang out with friends and can enjoy a cold drink with some buffalo chips and a bacon wrapped hot dog. or maybe a tamale. Yup, that’s right, I already scouted out the concession offerings at the stadium. This is clearly sad, all I have to look forward to is concession food! I never even thought about rain as an option when buying tickets for a mid-October football game. Perhaps Julie and I will just have to go to the Mall of America and let the boys freeze in the rain! 🙂
Caramel & Toffee Skillet Blonde Brownies

Ingredients
- 1/3 c. granulated sugar
- 1/2 c. packed brown sugar
- 1/2 c. margarine or butter softened
- 1 tsp. vanilla
- 1 egg
- 1/2 tsp. baking soda
- 1/2 tsp salt
- 1 1/4 c. flour
- 1 c. caramel pieces
- 1 c. chocolate covered toffee bits
Instructions
- Preheat your oven to 350°. In a large mixing bowl beat the sugars, margarine and vanilla until well combined, then mix in the egg. Stir in flour, baking soda and salt until well combined. Mix in caramel pieces and toffee bits. Spread in two 9″ or skillets or one 9″x13″ pan. Bake at 375° for 20-25 minutes.
