Honey & Goat Cheese Endive Bites
If you have been following along here for any amount of time, you are probably well aware of my obsession with goat cheese at this point. Whether I’m enjoying it in a quesadilla with strawberries, pasta with squash or tossing it in a salad, there really is no wrong time to use goat cheese!
I recently purchased a Bountiful Basket that had endive in it and I was overjoyed. I have been trying to get my hands on some of these buttery little leaves that are perfect for appetizers for MONTHS! I can’t find it within a 60 mile radius of my house, so I had pretty much given up on locating it.
Naturally, my first thought was to fill them with goat cheese. One of my favorite flavor combos is goat cheese, sage, pecans and honey. Normally I enjoy that on a crusty piece of bread, but I figured I would go for a lower carb option this time. These endive leaves were the perfect vessel for this phenomenal combo.
You could use any goat cheese, but I particularly enjoy the La Bonne Vie Spreadable Goat Cheese that I got from Target. It is so light and fluffy, it is absolutely wonderful. If you are a goat cheese lover, it is a must-try!
Honey & Goat Cheese Endive Bites
Ingredients
- 12 endive leaves
- 1 5-6 oz container spreadable goat cheese I used La Bonne Vie
- 1/4 c. pecan pieces
- 1/4 c. honey
- 12 small sage leaves
Instructions
- Fill each endive leaf with about a 1/2 oz. goat cheese and top with 1 tsp pecans, 1 tsp. honey and a leaf of sage. Serve immediately.
