Light Berry Angel Food Cake {15 Minute Dessert}
Angel Food cake is one of my husband’s favorite desserts. He isn’t much of a sweets guy, but if you have a fresh Angel Food cake on hand he will happily take a large slice covered with strawberries and fat free Cool Whip. I don’t actually make Angel Food cakes very often, despite how easy they are to make from a box. You literally just add water and bake the cake.
I happen to have the luxury of having a grocery store in my small little town that stocks some baked items from a bakery 30 miles away. This means that I can get a made-from-scratch Angel Food cake for a few bucks I don’t have to do any of the work! WIN WIN! If you aren’t quite so lucky and don’t have access to a yummy bakery cake, you can whip up an easy box mix cake instead.
Growing up my mother made a similar layered cake to this berry one, but with crushed pineapple and strawberries. I decided to change it up and for the creamy layer, I combined White Chocolate instant pudding with coconut milk and folded in Fat Free Cool Whip. The coconut milk gave it an extra layer of flavor I highly suggest you don’t pass up on!
I sliced my cake from the bakery in three layers and stacked them interchangeably with layers of the white chocolate and coconut mixture. To finish it off, I arranged some beautifully ripe berries for color, flavor and texture. This cake is absolute perfection for spring and summer when you want a sweet treat for dessert without all the fat and calories.
The fresh flavors in this cake are best enjoyed right after assembly. I don’t suggest you make this well in advance of any functions as it simply doesn’t hold all that well. It is so quick and easy to make though, you can easily whip this up right after dinner for a fresh treat the whole family will go crazy for!
Light Berry Angel Food Cake {15 Minute Dessert}
Ingredients
- 3.3 oz pkg Instant White Chocolate Pudding mix
- 1 c. light coconut milk
- 1 carton Fat Free Cool Whip
- 1 pre-made Angel Food cake
- 2 cups fresh berries
Instructions
- In a medium bowl, beat the pudding mix and coconut milk for 5 minutes until it has thickened.
- Gently fold the Cool Whip into the pudding mix and set aside.
- Slice the Angel Food cake into 3 layers. Starting with the bottom layer, top it with 1/3 of the Cool Whip mixture. Gently place the middle cake layer on top and cover with a 1/3 more of the Cool Whip mixture. Add the top layer to the cake and cover with the remaining Cool Whip mixture.
- Top the cake with fresh berries and serve immediately.

Any suggestion what I can use in place of white chocolate pudding? I have tried every grocery tore in the city and cannot find any. Can I use regular chocolate pudding? I know it won’t look as nice.
