Mocha Sour Cream Cupcakes
Do you have those people in your life that are difficult to buy presents for? I know I do! My mother is one of them. She doesn’t enjoy many excesses or have many hobbies, so coming up with a Christmas gift for her can be difficult at times. I decided this year instead of buying her something that would end up in her storage room (i.e. the record player I got her last year!), I was going to whip up a delicious treat for her.
One thing she does love is coffee. When I was at Walmart and spotted the section of Dunkin’ Donuts® Coffee, I knew it would be perfect for whipping up something special just for her. I grabbed a few packs of the K-Cup® Pods including the Glazed Chocolate Donut flavor that intrigued me and my mind started racing with the possible things I could do with them.
Initially I thought about putting together a gift basket with the coffee and a new mug so she could enjoy Dunkin’ at Home. Any coffee lover would love a big basket of Dunkin’ Donuts® Coffee, but I decided I wanted to take it to the next level. Mocha was the obvious choice and I decided a chocolate cupcake laced with coffee and topped with my favorite buttercream with a coffee spike, would be the perfect treat to share with my mom and show how much I appreciate everything she does for our family!
I started with a sour cream chocolate cake recipe and added in some strongly brewed Dunkin’ Donuts® Chocolate Glazed Donut Coffee. While these rich little cupcakes were baking I whipped up a batch of buttercream and added some of that same coffee.
The coffee flavor really comes through in the buttercream and you can dictate just how strong it is based on how you brew your pods of coffee. I wanted a noticeable presence of the coffee flavor so I brewed my K-Cup® Pods on the small setting so it would produce a stronger flavor.
After the cupcakes were baked and cooled, I topped them with a generous amount of buttercream. Buttercream is one of my favorite things, so there can really never be too much of it on cake in my opinion! The final touch was a chocolate covered espresso bean for a touch of something special and added mocha flavor.
I arranged a beautiful platter of these cupcakes with a few boxes of Dunkin’ Donuts® K-Cup® Pods and delivered the early Christmas present to my mom. I wanted to give her a chance to enjoy them before the holiday rush and all of the sweets that will be flooding her house during Christmas. She loved the cupcakes and appreciate all of the yummy coffee.

Mocha Sour Cream Cupcakes
Ingredients
- Cake
- 1 c. unsalted butter
- 1 3/4 c. sugar
- 2 large eggs
- 1/2 cup sour cream
- 1 c. Dunkin' Donuts Coffee strongly brewed
- 1/3 c. cocoa powder
- 1 tsp. salt
- 2 c. all-purpose flour
- 1 1/2 tsp. baking soda
- 2 teaspoon vanilla extract
- Buttercream
- 1 c. shortening butter flavored
- 1 c. butter
- 1/2 c. Dunkin' Donuts Coffee strongly brewed
- 2 tsp. vanilla extract
- 32 oz. bag powdered sugar
- Optional - Chocolate covered espresso beans for garnish
Instructions
- Preheat your oven to 350°.
- In a large bowl, beat the butter and sugar for a minute. Add the eggs, sour cream and coffee and mix until combined. Add the remaining cake ingredients and beat for 1-2 minutes until smooth and only a few lumps are visible.
- In lined cupcake pans, fill each cup 3/4 full. Bake at 350° for 25-30 minutes until a toothpick inserted in the center of the cupcake comes out clean. Set aside and allow to cool completely.
- Meanwhile, in a large bowl, beat the butter and shortening for 3-4 minutes until smooth and lightened a bit in color. Add the vanilla, and 1/3 of the powdered sugar and beat for 2-3 minutes. Add half of the remaining powdered sugar and beat for an additional 2-3 minutes. Add the remainder of the powdered sugar and beat the buttercream until it is light and fluffy.
- Pipe or spread the buttercream on the cooled cupcakes and top with a chocolate covered espresso bean. Store in an airtight container.
