In our family, we all make our way to my parent’s house on Christmas morning to watch our little nephews open their gifts from Santa. We enjoy brunch together and then hang out playing games and spending quality family time together.
My mom is usually in charge of holiday brunches, but I try to help out when I can. She let’s herself get super stressed out about making a big meal, so to cut back on time and stress she usually opts for a dish she can make the night before. Historically that means we enjoy egg bake and Blueberry Sour Cream Coffee Cake.
If you know me, you know that I get so bored with the same old thing over and over. Therefore, I decided I was going to come up with something new and amazing for Christmas morning brunch. I wanted to stick with the overnight option but get outside of the typical egg bake and coffee cake box.
I was at Target last weekend browsing their isles, because that is just what you do at Target. There is so much goodness you have got to make sure you don’t miss anything! They have holiday themed EVERYTHING! From your kitchen, to your living room to your Christmas tree, they have it all and it is all so cute. I had to pick up a few things to deck out my new house with holiday decor and then I made my way over to the grocery section.
As I was in the dairy isle I came across some new International Delight flavors. I threw a couple in my cart for the coffee drinkers who would be home for the holidays and then I had a light bulb moment. The new Raspberry White Chocolate flavor would be perfect for that breakfast I was dreaming up in my head!
My breakfast came together so quickly. A loaf of sliced up french bread smothered in a mixture of eggs, cream, cinnamon and International Delight Raspberry White Chocolate all topped off with some fresh raspberries and blackberries. There it was, a breakfast that dreams are made of!
My mom will be very happy to know that I have brunch this Christmas morning covered and she can kick back and enjoy her grandchildren. Nothing to stress over with this meal!

Overnight Raspberry French Toast Bake
Ingredients
- 2 loaves french bread
- 8 eggs
- 1/2 c. whipping cream
- 1/2 c. International Delight White Chocolate Raspberry
- 1 Tbsp. vanilla
- 1 tsp. cinnamon
- 1 pint berries
- powdered sugar and syrup for serving
Instructions
- In a large bowl, beat the eggs and whisk in the cream, International Delight, vanilla and cinnamon.
- Slice your loaves of bread into 1 inch slices. Dunk each slice in the egg and cream mixture and arrange in a 9x13 pan. Pour the remaining egg and cream mixture over the bread and cover.
- Refrigerate for 4-12 hours.
- Remove from the refrigerator while the oven is preheating to 350°.
- Bake for 20 minutes uncovered and an additional 10 minutes covered.
- Serve immediately with berries, powdered sugar and syrup.
