Pomegranate Balsamic Dressing is a light and refreshing dressing with pomegranate and orange juice for a healthy dressing you can enjoy on just about any salad. Pair this dressing with a light shrimp and fruit salad or a more hearty chicken and veggie salad. Either way, you will love the fresh flavors bursting from this dressing.
I am head over heals with making my own salad dressings and recently had some extra pomegranates laying around from making these Pomegranate Chocolate Mousse Bowls. I also had plenty of oranges in my refrigerator from the Bountiful Basket I just picked up this weekend. Naturally I had to put them to good use by whipping up a batch of salad dressing and pairing them with my favorite vinegar of all all time, balsamic.
Have you ever heard of Bountiful Baskets before? I had first heard about them about a year ago and was very intrigued. Last week was the first time I ever got around to signing up for one and committing to the 8:30am pickup time on Saturday morning. Not only was it early on Saturday morning, but it was one of the coldest days of winter with sub-zero temps and howling winds.
I have to say, despite the early wake up and cold temps it was totally worth it though. I got a big box of fruits and vegetables for only $20. The box included 4 oranges, 3 lemons, 5 apples, 3 avocados, 5 kiwis, 2 English cucumbers, 1 jicama, 4 yellow squash, 1 bunch of spinach, 1 bunch asparagus, 4 red onions and 8 medium red potatoes. We won’t talk about how I started grating my cucumber because I initially thought it was a zucchini…Ugh! Check out this picture over on my friend Julie’s Instagram who got the same box.
You don’t know what you will be getting each time, other than you will get 6 fruits, 6 vegetables and they tend to all be pretty mainstream foods. If you are looking for a way to incorporate more fruits and vegetables into your diet at an affordable price, I highly recommend you check out this program. It is entirely non-profit and they only ask that you assist with filling baskets one Saturday every few months. Don’t let the 8:30am pickup time scare you away either, each location varies in what time of day their Saturday pickup is.
Pomegranate Balsamic Dressing

Ingredients
- 1/3 c. pomegranate juice
- 1/4 c. orange juice
- 1/3 c. balsamic vinegar
- 2/3 c. olive oil
- 1/2 tsp. garlic powder
- 2 Tbsp. dijon mustard
- 1 Tbsp. honey
Instructions
- In a medium bowl, combine all of the ingredients and blend with an immersion blender or toss everything in your blender and give it a whirl.
- Store refrigerated up to two weeks.
