Healthy Pancake Recipe
While a hearty and fluffy buttermilk pancake recipe is always loved at just about any meal in my house, sometimes it is nice to make this classic dish for a light and healthy breakfast.
If I am looking for a lighter option, these Banana Protein Pancakes were my go-to. More recently I tried Oatmeal Pancakes and I was in love. Not only are they a healthier recipe, they are also gluten-free and dairy-free which is fantastic if you are serving a diverse crowd for brunch.
Chia Seed Pancakes
These Oatmeal Pancakes contain many of the same staple ingredients that traditional pancakes do. From baking powder and sugar to oil and salt, there are some similarities.
Where we take the most obvious departure is the grain of choice. Instead of using flour, we are using gluten free oats and chia seeds to thicken these pancakes. This is going to offer a different texture than traditional pancakes, but its great in it’s own right.
Dairy Free Pancake Option
This Oatmeal Pancake recipe calls for almond milk as a dairy free option. If that isn’t something you are concerned with like myself, you can certainly substitute any milk. We often use whole cow’s milk and other options include coconut milk or soy milk. The options are endless.
I cooked my pancakes on a Tefal crepe griddle, but any griddle will do. I just like the crepe pan to keep everything nice and uniform!
What are some healthy toppings?
Syrup and butter are the essential duo when it comes to fluffy buttermilk pancakes. Those are obviously not the healthiest of options, but it doesn’t mean you can’t indulge every now and again. Honey is another great indulgent topping.
If you are looking for healthier pancake toppings, there are a variety of delicious options. Fresh fruit, including strawberries, blueberries or even diced peaches are fantastic.
This Cherry Almond Topping is a personal favorite. It adds a nice warmth with the cinnamon spiced fruit and is slightly sauce, which is perfect for pancakes.
I personally love a dollop of Greek yogurt or a drizzle of peanut butter on top of my pancakes along with fruit. Nuts or toasted coconut are a great option to add some crunch.
Are Oatmeal Pancakes Healthy?
Depending on what you top them with, Oatmeal Pancakes are a healthy alternative to traditional pancakes. They use whole grains and contain healthy fats from chia seeds and coconut oil.
A bowl of oatmeal is certainly going to be a healthier option for breakfast, but if you are craving some pancakes Oatmeal Pancakes are a great recipe.

While not every oatmeal pancake recipe is vegan, this particular one is! That means that you can serve it to just about anyone who shows up for brunch!

Oatmeal Pancakes
Ingredients
- 1 c. oats gluten free*
- 1 3/4 c. almond milk
- 1 Tbsp. chia seeds
- 2 Tbsp. brown sugar
- 1 Tbsp. canola or coconut oil
- 2 tsp. vanilla extract
- 1 tsp. baking powder
- pinch of salt
Instructions
- In a medium bowl, combine oats, chia seeds, brown sugar, baking powder and salt. Pour milk and oil in the bowl. Mix well with a wooden spoon. If you have difficulty and it’s easier for you, you can use a blender to mix the batter.
- Preheat a pancake machine or a non-stick skillet greased with a bit of coconut oil or oil spray.
- Pour 1/4 cup of the batter to make 1 pancake. Cook until bubbles form and edges are starting to dry then flip and cook the other side until golden. Serve immediately.
