This Instant Pot Greek Chicken Noodle Soup is a comforting bowl of healthy goodness with a dash of fresh Mediterranean flavors and lemon. The best part is that it is an easy recipe that comes together in less than 30 minutes with your electric pressure cooker.
Pressure Cooker Chicken Soup
If you need a comforting bowl of chicken noodle soup and you want to add a little bit of extra amazing flavor to the classic dish, look no further. This easy Instant Pot Greek Freak Chicken Noodle Soup is made in your pressure cooker with the help of a pre-made spice blend.
Spiceology Greek Freak Seasoning
I love this Greek Freak Mediterranean Rub from Spiceology. It’s got all the classic Greek herbs along with dried onion, sun-dried tomato, orange peel and a touch of chili pepper. It have a subtle hint of spice to it that compliments the flavors wonderfully.
It is incredibly versatile as well. I have used it in some easy Greek Meatballs, on smoked chicken breasts or in a light homemade Greek dressing.
I highly recommend you grab a jar and add a pinch to your recipes for and easy way to add great flavors. It’s one of my favorite spice rubs I have in my kitchen.
Substitute for Greek Freak Spice Blend
If you don’t have a jar of Greek Freak spice blend on hand, but you still want to make this great Chicken Noodle Soup, don’t fret. You can use any Italian or Greek seasoning blend.
If you use a simple Italian spice blend, I’d recommend you add a pinch of chili powder as well to add that subtle heat you will be missing from the Greek Freak.
How to make Chicken Soup in Instant Pot
To get started, you will want to melt some butter in the inner cavity of your Instant Pot on the sauté function. When the butter is melted, add the chicken breasts to the pot and season with garlic salt. Add 8 cups of chicken broth to the pot with the chicken.
Turn the knob to seal and cook under high pressure for 15 minutes. The Instant Pot will display “on” while it is pressurizing. When at pressure, it will begin counting down from 15.
When the cooking time is complete, carefully turn the knob to vent using oven mitts and/or a long wooden spoon to avoid any burns from the steam.
Remove the chicken to a cutting board and allow to rest while you add the following ingredients to the pot of broth.
- 4 cups chopped carrots
- 4 stalks celery, diced
- 1 large yellow onion, finely diced
- 1 Tablespoons Better Than Bouillion Roasted Chicken base
- 4 teaspoons Greek Freak spice blend (Spiceology)
- 3 cups wide egg noodles
Give everything a quick stir and place the lid back on the pot. Turn the knob to seal and cook under high pressure for 4 minutes. When the cooking time is complete, carefully turn the knob to vent.
While the soup is cooking, use two forks to shred the chicken after it has rested for 5 minutes.
Chicken Noodle Soup with Lemon
When all of the pressure has released and the pin drops on the lid, remove the lid. Stir the shredded chicken and juice of one large lemon into the soup and enjoy!
Much like my Pressure Cooker Lemon Chicken & Brown Rice Soup, you really can’t go wrong with a splash of fresh lemon juice in chicken soup. Even if you are cracking open a jar of store-bought chicken soup, I highly recommend adding a bit of lemon to it. It really adds a brightness to the comforting soup.
If you like a little more kick to your soup, sprinkle a little extra Greek Freak on your bowl of soup and stir in while hot.
