I have been enjoying a nice vacations from work the last eleven days. With the holidays, our office was closed so I got to take some time off. It was great timing after all of the craziness from the holidays and countless photo shoots. I got a chance to re-charge as well as get some things done around the house.
This morning, my vacation came to a sad, sad end. My alarm clock went off at 6:30am and I begrudgingly rolled out of bed and got ready for the day. Instead of comfy yoga pants and sweats like the last week and a half, it was time to find my dress pants at the bottom of the dresser drawer.
So, I made my way to work in my grown-up clothes…and FROZE my butt off! Holy heck, why did my first day back at work after vacation have to be the COLDEST day this winter. It was -10°F and that didn’t account for the strong winds. It didn’t help that I forgot a scarf and gloves because I was apparently out of practice for leaving the house. Man oh man, what I wouldn’t have given to stay cuddled up in my warm bed this morning!
If weather like this continues, I can promise that there will be lots of slow cooker and comfort food coming your way, because a girl needs to find some way to warm up with temps like these. But on the bright side, at least I know that I have some of this amazing salad to enjoy for lunch at work this week!
Poppy Seed, Grape & Chicken Pasta Salad
Equipment
Ingredients
- 1 1/2 c. Kraft Creamy Poppy Seed Dressing
- 1 c. mayonaisse
- 1 Tbsp. Champagne vinegar substitute apple cider vinegar
- 1/2 tsp. salt
- 1 16 oz. box cavatappi pasta prepared al dente
- 2 c. chicken cooked and cubed
- 4 c. grapes halved
- 1 c. dried cranberries
- 1 c. golden raisins
- 1 c. sliced almonds
- 2/3 c. green onions diced
Instructions
- In a large bowl, whisk the first four ingredients. Fold in the remaining ingredients and refrigerate for two hours. Serve cold.

I love this pasta salad! I made it for a baby shower and it was a huge hit and I had family asking for the recipe! I use diced turkey from the deli instead of chicken and it tastes wonderful

What salad dressing can I use as an alternative to the Kraft Poppy Seed Dressing as I can not get it here?
I have bought every other ingredient and was hoping to make for Christmas Lunch???

You can use any creamy poppy seed dressing, the flavor might just be a tad different.

Could I substitute chickpeas(Garbanzo beans) for the chicken? I’m not a vegetarian and I know I could just leave out the chicken, but in my bridge club there are some who don’t eat meat and just thought the substitution would add something filling.

Hey Kimberly, I am not sure how well garbanzo beans would pair with this salad, but you could always give it a try. Perhaps you could try adding another nut such as pecans or walnuts for added protein instead?
