If you are looking to eat healthier in the new year, tuna is one of the healthiest protein options available. You might see the body builder types eating it straight out of the can for lunch, but personally I prefer mine mixed in a balanced meal.
There is a reason those lean and healthy individuals are eating it straight out of the can though. Tuna is not only loaded with lean protein, but it is also packed with nutrients like iron, calcium, omega 3 and much more! Because tuna has a mild flavor, it pairs well with a variety of flavors. For these cakes, I added flavors like dill, lemon, garlic, red pepper and onion for a bold and flavorful Mediterranean spin. Topping it with a fresh cucumber, tomato and feta salad was the perfect finish along with a dollop of Greek yogurt.
This is the type of meal that you can whip together in a matter of minutes. After I got home from the gym, I threw the ingredients in a bowl, pressed them into patties and cooked them up in less than 15 minutes! Mediterranean Tuna & Quinoa Cakes
Ingredients
- 1 5 oz can Bumble Bee® Chunk Light Tuna
- 1 c. quinoa cooked
- 1 egg
- 1 egg white
- 1/4 c. red pepper finely diced
- 1/3 c. green onion chopped
- 1/2 tsp. garlic powder
- pinch of salt
- 1 tsp. fresh dill diced
- 1 Tbsp. lemon juice
- 1/4 c. old-fashioned oats
- Cucumber Salad
- 2/3 c. cucumber
- 2/3 c. tomatoes diced
- 1/3 c. feta
- 1 tsp. fresh dill
- 1 Tbsp. lemon juice
- 1 c. non-fat plain Greek yogurt
Instructions
- In a large bowl, mix all of the patty ingredients until well incorporated. Scoop 1/3 c. of the mixture and form into cakes 2/3" thick. In a large skillet over medium heat, sprayed with non-stick pan spray, cook for 2 minutes on each side.
- Meanwhile, toss the cucumber salad ingredients together in a bowl until combined.
- Top each cake with cucumber salad and a dollop of Greek yogurt.
