Shrimp & Feta Orzo Bake is a one-dish meal with whole wheat orzo pasta, shrimp and feta for a flavorful and healthy dinner idea. If you are like me and hate doing dishes, a one-dish meal is a dream. Not only is this easy to prepare, but it is impressive enough to serve at any dinner party for a no-mess no-fuss meal. Pair it with a nice Chardonnay and some roasted asparagus for a complete meal that you can serve while entertaining or for a date night at home with your special someone.
I made this dish all for myself this weekend while my husband was away, busy working. Some times we need to dedicate a little “me time” for ourselves and enjoy a bit of relaxation with the things we love. For some people that might mean chilling at a coffee shop with your favorite book or perhaps a spa day, but for me it means a great meal and a glass of wine with my favorite magazines. This year I resolved to make more of an effort to set aside some relaxing time for myself so I can decompress from everything going on in my busy life, such as work and a stressful home remodel.
I went on a quick shopping trip last week with a friend to grab some groceries and remodeling supplies. I took the opportunity to swing by Walmart and grab some of the things on my shopping list in addition to a few of my favorite magazines, including All You® and InStyle®. I used this Walmart digital coupon that is available until 2/16/15 while supplies last, to save $1.00 off ONE (1) PEOPLE®, InStyle®, PEOPLE StyleWatch®, All You®, or Real Simple® magazine. I do love saving money, whether it is one dollar or a hundred!
All You® has long been a favorite of mine with plenty of great money-saving ideas, projects and naturally my favorite, recipes! I was flipping through the magazines and found so much fantastic inspiration for dinner. The BBQ chicken pizza sounded tempting but I ended up making a variation of the Baked Shrimp with Tomatoes and Feta. I decided to add orzo to the dish to make it a complete meal and added some more flavor with white wine and garlic.

Shrimp & Feta Orzo Bake
Ingredients
- 14.5 oz. diced tomatoes with garlic
- 1 1/2 c. whole wheat orzo pasta uncooked
- 1 small onion finely diced
- 1/2 c. white wine
- 1 1/2 c. chicken broth
- 1 tsp salt
- 2 tsp. fresh garlic minced
- 1 lb. raw shrimp peeled, deveined and tails removed
- 2 Tbsp fresh oregano chopped (~or~ 2 tsp dried oregano)
- 6 oz. crumbled feta
- non-fat plain Greek yogurt optional garnish
Instructions
- Preheat your oven to 350°.
- In a 9"x13" casserole, mix diced tomatoes, orzo, onion, white wine, chicken broth, salt and garlic until well mixed. Top with raw shrimp, feta and oregano. Bake at 350° for 40-50 minutes, or until pasta is al dente. Serve topped with a dollop Greek yogurt.
