I can’t get enough of the cherry tomatoes bursting from my garden. When you eat fresh garden grown tomatoes, you truly understand why they are a fruit and not a vegetable. The sweetness is divine and while they are fantastic popping as a snack all on their own, you can pair them with some amazing flavors to make them even more impressive.
Peach Caprese Salad
Caprese salad is the traditional Italian combination of fresh mozzarella, tomatoes and basil. We are adding peaches and balsamic glaze to the mix to make it even better.
Instead of serving it as a salad like this balsamic caprese pasta salad, we grabbed some toothpicks and skewered up individual bites with five simple ingredients to make the perfect finger food for parties.
Tips for making the best caprese skewers
When it comes to assembling your tomato and peach skewers, it is as simple as plopping the 5 ingredients on a toothpick. Here are a few helpful hints to make your peach caprese bites as simple and delicious as possible.
1
Cheese
If you aren’t a big fan of fresh mozzarella, you can substitute a chunk of feta, provolone, whole milk mozzarella (the block) or even some smoked white cheese.
2
Basil
Only use 1/4 to 1/2 piece of basil for each bite. A whole piece of basil will overwhelm the other flavors. Fold the little pice of basil in half so it stays on the skewer better.
3
Peaches
You most definitely want to use fresh peaches for this recipe. I wouldn’t recommend substituting canned. To keep your peaches from browning, toss them in just a little bit of fresh lemon juice.
How to serve Caprese Bites
The best part of these caprese bites is that they can me made in advance. If you plan to make these ahead of time, simply toss the diced peaches with some fresh lemon juice to prevent them from browning.
Assemble all the skewers and store them on a serving platter tightly covered with saran wrap. When you are ready to serve them, drizzle some balsamic glaze over all the skewers and enjoy!
When I served these Peach Caprese Bites to some ladies, I did notice a couple of them eating one ingredient at a time from the skewer. So just be sure to kindly inform your guests they are best enjoyed as one single bite.
The combination of creamy cheese, aromatic basil, juicy tomatoes and peaches drizzle with tangy balsamic all come together to balance each other perfectly.
