If you have some leftover pulled pork in your refrigerator, these Pulled Pork Burritos are the perfect way to use it up for a quick recipe. Whether you want to pack a burrito for lunch at work or need an easy family friendly dinner, this is a must-try.
Pork and Beans
For this burrito we are using pork and beans that were cooked together. I know that everyone seems to have either a love or hate relationship with beans, so they are completely optional. With that said, we love them for their added fiber and iron.
Ingredients for Pork Burrito
It doesn’t get much simpler than this. Six simple ingredients and you have an amazing and well rounded meal. Here is what you will need,
- Flour Tortillas – White or whole wheat both work great
- Greens – Use whatever greens you have on hand, whether it is garden lettuce, spinach or just about anything else.
- Rice – White or brown rice are both good options. Alternatively you could use another grain or grain mix with quinoa, barley, etc.
- Sour Cream – Classic sour cream is good, but Mexican crema is even better!
- Cheese – From shredded cheddar to my favorite Manchego, use whatever cheese you have on hand.
- Beans – Whether you cook your pork with beans or add them to the burrito, kidney beans or black beans are our go-to for burritos.

This burrito is best with pulled pork, but what type of pulled pork is entirely up to you. Whether you buy a container of sauceless pulled pork from the grocery store or use up your leftover pulled pork you cooked for dinner last night, the possibilities are endless.

Can I make these ahead?
The thing about making burritos ahead of time is properly layering the ingredients. What you don’t want to do is put anything saucy on top of the tortilla or it will become a mushy mess in no time.
When I layer wraps or burritos I always start with a good layer of greens first. This creates a nice barrier between any sauce and the flour tortilla. Next I would add the rice and cheese, finished with the sour cream and pork. If you are adding any sauces, do this last.
Top the meat with a little bit more greens and fold the sides of the tortilla towards the center. Carefully wrap in a log, while tucking the sides in for a good seal. Don’t cut the burrito in half until you are ready to eat it. This is another reason that burritos become mushy, because the sauces can leak out onto the tortilla.
How to store burritos
If you are making these pulled pork burritos ahead of time, you will want to wrap them up tightly with saran wrap or tinfoil, depending on how you plan to reheat them. Use saran wrap if you will be microwaving them. Tinfoil is the best option for wrapping them if you will reheat them in an AirFryer or oven.

Pulled Pork Burrito
Ingredients
- 3 cups pulled pork in sauce
- 6 large flour tortillas
- Lettuce
- 3/4 cup sour cream
- 1 ½ cups rice
- 1 ½ cups shredded cheese Manchego or cheddar
- OPTIONAL – Fresh cilantro
Instructions
- Place the tortillas, one at a time, on a plate and heat in the microwave for a 10 seconds.
- Top each tortilla with lettuce, 1/4 cup rice, 1/4 cup cheese, 2 Tablespoons sour cream, 1/2 cup 1/2 cup pulled pork, cilantro and a little bit more lettuce.
- Fold the two sides of a tortilla towards the center. Carefully wrap in a log, while tucking the sides in for a good seal. Roll up tightly but not too much. Repeat with all tortillas.
- Serve immediately, or wrap tightly and store refrigerated up to 24 hours.
