How to Make Rhubarb Turnovers
Turnovers tend to be one of those recipes that intimidate people. In reality they are incredibly easy to make with the help of frozen puff pastry.
Turnovers Made with Puff Pastry
Puff Pastry may seem like a daunting ingredient, simply because it isn’t used as commonly in baking. In reality, it is as easy as thawing and unfolding. That’s it! Cut the sheets of puff pastry into four equal squares and fill them with your favorite turnover filling.
Strawberry Rhubarb Sauce
For these turnovers we are filling them with an amazing strawberry rhubarb sauce that has the perfect balance of flavors. Add the following ingredients to a saucepan and cook down until the rhubarb is completely softened and breaks down into a sauce.
- 1 cup rhubarb
- 1/4 cup granulated sugar
- 1 Tablespoon all-purpose flour
- 1 Tablespoon butter
- 1/8 teaspoon salt
- 2 teaspoons water
Fresh Strawberries
When the rhubarb is cooked down, add 1 cup of chopped strawberries to the pan. At this point you can cook them down to into a sauce or just cook them for a couple minutes so there are still large chunks of fruit.
Remove the sauce from the oven and stir in 1/4 teaspoon vanilla extract.
Can I use frozen strawberries or rhubarb?
If you want to use whole or sliced unsweetened frozen strawberries, they will work great. You will want to add an additional 1-2 teaspoons of flour to account for the extra moisture from frozen fruit.
The same goes for frozen rhubarb. Thaw the rhubarb before cooking and strain to try and remove any additional moisture. Add a little extra flour to account for the extra moisture that will remain.
Assembling turnovers
Allow the strawberry rhubarb sauce to cool to room temperature before serving. Rhubarb honey sauce is another great filling for rhubarb turnovers if you aren’t a big fan of strawberries.
Spoon two tablespoons of rhubarb sauce into the center of each puff pastry square, leaving a small border around the edges. Be careful not to overfill, as it may make sealing the turnovers difficult.
Fold the pastry over the filling to create a turnover shape, enclosing the filling completely. Press the edges firmly together with a fork to crimp the edges, creating a decorative seal. This will help prevent the filling from leaking during baking.
Egg Wash
For a golden and glossy finish, you can brush the top of each turnover with a beaten egg white or milk using a pastry brush. This step is optional but can enhance the appearance of the baked turnovers.
Baking Puff Pastry Turnovers
Place the turnovers on a greased or parchment lined baking sheet, ensuring they are spaced apart. Bake for 20-25 minutes at 400°F or until the turnovers turn golden brown and puffed up. You want to make sure they are fully baked through or the bottom and insides can be slightly under baked and have a unpleasant raw taste.
Serving Rhubarb Turnovers
Once baked, remove the turnovers from the oven and allow them to cool on a wire rack for a few minutes. Serve warm or at room temperature, optionally drizzled with frosting, dusted with powdered sugar or accompanied by a scoop of ice cream.
Vanilla Frosting for Turnovers
We love our turnovers drizzled with vanilla frosting and it’s so easy to whip up. Add the following ingredients to a bowl and whisk until smooth.
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk
Add additional milk if the frosting is too thick to drizzle. Don’t thin it out too much or it will spread too thin over the turnovers. When the mixture is whisked it should allow for a thick drizzle.
Can I freeze turnovers?
This recipe makes 8 strawberry rhubarb turnovers. We are confident your family will make them disappear in no time, but if you want to preserve some of the rhubarb goodness for another season, you can freeze them baked.
- Allow the Turnovers to Cool: Let the baked turnovers cool completely at room temperature before freezing. This helps to prevent condensation and maintain their texture.
- Arrange on a Baking Sheet: Place the cooled turnovers on a baking sheet lined with parchment paper, making sure they are not touching each other. This will prevent them from sticking together during freezing.
- Flash Freeze: Place the baking sheet with the turnovers in the freezer and allow them to freeze for about 1-2 hours or until they are firm. Flash freezing individually ensures they maintain their shape and don’t stick together.
- Transfer to Freezer Bags or Containers: Once the turnovers are frozen, transfer them to freezer-safe resealable bags or airtight containers.
- Remove Air and Seal: Squeeze out any excess air from the bags or containers before sealing them tightly. This helps prevent freezer burn and keeps the turnovers fresh.
- Store in Freezer: Place the sealed bags or containers in the freezer, making sure they are stored in a flat position to maintain their shape. Turnovers can typically be stored in the freezer for up to 2-3 months. Beyond that, their quality may start to deteriorate.
- Thawing and Reheating: When you’re ready to enjoy the turnovers, remove them from the freezer and thaw them in the refrigerator overnight. Once thawed, you can reheat them at 350°F in the oven for 8-10 minutes or Air Fryer for 5-7 minutes.

Ingredients
Strawberry Rhubarb Sauce
- 1 cup rhubarb

- 1 package 2 Count, 17.3 oz frozen puff pastry
- 1 egg white
Vanilla Frosting
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1-2 tablespoons milk
Instructions
- Thaw puff pastry at room temperature. This will take about one hour.
- Strawberry Rhubarb Sauce
- To a saucepan over medium high heat, add rhubarb, sugar, flour, salt, butter and water. Cook for 5 minutes until the rhubarb is softened and breaks down into a sauce.
- Add the strawberries to the pan and cook for an additional 2-5 minutes, depending on how big of chunks of strawberries you want to remain in the filling.
- Remove the sauce from the oven and stir in 1/4 teaspoon vanilla extract. Allow to cool to room temperature.
- Turnovers
