Mango Salsa
With summer well on it’s way, it is the perfect time to start thinking about picnics, grilling out and just spending time outside! This mango salsa is such a delicious and fresh snack you can serve with baked chips or it makes the perfect addition to a grilled chicken breast or pork chop for a light and healthy meal.
The pairing of sweet tender mangoes and crisp bell peppers, tomatoes and red onion ensures this salsa definitely won’t be lacking in the flavor or texture department!
I am sooooo ready for it to be summer. I get to go down to 20/hours a week starting mid-May and I am dreaming of all the project I can work on with the extra time off. I have things around the house that still need touching up, such as unfinished paint, nail holes, etc. but more fun house projects are my craft room projects. I have a quilt partially done that I have been promising my mom would finished by the end of the year. If I don’t get it done this summer, I doubt I ever will!
I’m afraid the time off at my full-time job will transform into worked hours for my photography business though. I have already been booking some of the weekdays for photo shoots, but at a certain point I just need to say enough is enough. I juggle a lot of balls throughout most of the year so I need to sit back and enjoy a little relaxation this summer. A nice big bowl of this mango salsa by my side as I kick my feet up and enjoy the sun sounds like the perfect way to spend the summer!
Mango Salsa
Ingredients
- 1 c. mango diced
- ⅔ c. tomatoes chopped
- ½ c. sweet bell pepper finely diced
- ½ c. red onion finely diced
- Juice of 1/2 lime
- 1/2 tsp. salt
- pinch of pepper
Instructions
- Toss all of the ingredients together and store in an air-tight container refrigerated.
