Easy Bacon & Goat Cheese Pasta
Now that I moved even further away from the “big small town” in our area, my husband and I seem to make it out to dinner even less. I don’t make pasta often, but when I do, I crave one of the fabulous creations at our local Italian joint. As usual, the husband was out working, so I thought it was fine time I made myself something indulgent for dinner.
I had boiled up some balsamic reduction a few days before so I had leftovers on hand. Whenever I make the reduction, I do a whole bottle at once and refrigerate the rest for later uses. Balsamic reduction makes just about anything better, from pizza to desserts so it doesn’t take long for it to disappear!
For this dish I started out with some butter, white wine and garlic, and tossed that with pasta, bacon, Parmesan and goat cheese all drizzled with the balsamic reduction for a mouthwatering dish I couldn’t get enough of! If you are looking for something quick and easy that will impress some last-minute dinner guests, this meal will make you shine. Pair it with a nice glass of wine and some crusty bread, and your dinner guests will be swooning over the flavors…not to mention perhaps slumped in their seats from the carb overload! 😉 But hey, what fun is it never indulging in carbs?!
Easy Bacon & Goat Cheese Pasta
Ingredients
- 1 box spaghetti or angel hair pasta
- 1/2 c. butter
- 2 tsp. garlic
- 1/4 c. white wine
- 2/3 c. crumbled bacon
- 1/4 c. grated Parmesan
- 4 oz. chevre soft goat cheese,
- 1/4 c. balsamic reduction
Instructions
- Cook the pasta according to the directions.
- Meanwhile, in a small saucepan, add the butter and garlic. Allow to cook for 2-3 minutes and add the white wine. Continue cooking for an additional 2 minutes.
- Add the bacon to the butter mixture and cook just until the bacon is heated through. I actually used pre-packaged bacon pieces for this to keep it quick and simple. By cooking the bacon in the butter for a couple of minutes, it infuses the entire dish with the rich bacon flavor.
- When the pasta is done cooking, strain and return to the pot. Toss with the bacon and butter mixture so it is well coated. Break the soft goat cheese into small pieces and add it to the pasta along with the Parmesan. Lightly toss the pasta so everything is combined.
- Serve the pasta immediately and allow each person to dress their own pasta with balsamic reduction.
