It is officially summer and I am loving all the fresh produce available. Strawberries are tender, pineapple is juicy and grapes are sweet! There is nothing quite like summer fruit and vegetables. Despite it being summer, some days sure don’t feel like it. Last weekend we had a pretty bad storm come through with gusts of wind, lightning and just a weeeee little bit of hail as seen below.
My dad texted me this picture when I was at a party an hour away from home and my heart sank. There were talks of tornadoes and all I could imagine was my beautiful new home in shambles when I got there! Fortunately for me the hail didn’t make it the 5 miles east out to our house.
One of our fields got hit with hail, but it is fine seeing we have hail insurance. My parents on the other hand got hid hard, as you can see, and will have to replace the roof on their brand new house. You just never know what Minnesota weather is going to bring you!
So enough of this hail and storm nonsense and on to bright and beautiful things like these fruit and chicken lettuce cups. The sweet fruit is paired with tender chicken, poppy seed dressing, Greek yogurt and salty pistachios all wrapped up in butter lettuce for a fresh and healthy lunch idea!
I recommend serving this the same day you make it, as the yogurt and dressing can take on a more bitter flavor after being stored in the refrigerator for a few days. This salad is best enjoyed fresh. For a lower fat version, leave out the pistachios!
Fruit & Chicken Salad Lettuce Cups with Creamy Poppy Seed Dressing
Ingredients
- 1.5 c. cooked chicken cubed
- 1/2 c. strawberries sliced
- 1/2 c. pineapple diced
- 1/2 c. grapes halved
- 1/2 c. pistachios shelled and roughly chopped
- 1/2 c. non-fat plain Greek yogurt
- 1/4 c. mayonnaise
- 1/3 c. Citrus Poppy Seed Dressing
- Butter lettuce for serving
Instructions
- In a medium bold whisk the Greek yogurt, mayonnaise and poppy seed dressing. Fold in the remaining fruit, chicken and pistachios and serve 2/3 c. of the mixture in a leaf of butter lettuce. Enjoy immediately!
