This Minnesota Weather is unbelievable. A few weekends ago it was 90° and we were all sweating our butts off and then the temps all dropped into the 40°s and I was freezing my butt off!
My bedroom is on the Northwest corner of the house and is the absolute coldest room the the house. Even when the weather is still nice in the 60°s, I find myself crawling into an ice cold bed. My human heater, aka the husband, doesn’t get in from the field until I am already sleeping, so he is useless in this situation.
I decided I just couldn’t take crawling into my freezing bed at night anymore so I got creative. I’m not a fan of electric blankets, because they get too warm too fast. I actually enjoy sleeping at repetitively cool temperatures, but the current state of cold is just too much.
I have lots of space heaters in my house because they help warm up my home-studio for newborn photo shoots so I figured I could use one of those. I didn’t like the idea of running a space heater all night for a couple of reasons though. First, the idea of it starting a fire and burning my beautiful house to the ground was overwhelming. I know, I know, the likelihood of that actually happening is minuscule, but STILL! Secondly, I didn’t want the room to be warm the entire night, just when I crawled into bed and woke up in the morning.
The idea hit me like a bolt of lightning, a Christmas tree timer! I bought lots of them from Target last year after Christmas on clearance because they seem to have lots of good uses. I hooked it up to my space heater and timed it to run 1 hour before I go to bed and one hour before I wake up in the morning. After making some temperature adjustments, it is FANTASTIC! Seriously you guys, I am quite impressed with myself if you can’t tell. 😉
When I am cold I crave comfort food and this One Pot Homemade Alfredo Rigatoni hit the spot perfectly! If you don’t have a special little space heater set up like myself and are looking for a hearty meal to warm you up, this pasta dish has got you covered.
One-Pot Homemade Alfredo Rigatoni
Ingredients
- 1 small onion diced
- 2 tsp. garlice diced
- 2 c. heavy cream
- 1 1/4 c. chicken broth
- 1/2 lb. pasta rigatone, penne, shells, etc.
- 1 tsp. salt
- 1 c. grated parmesan
Instructions
- In a deep skillet saute the onions over medium heat for 3-4 minutes. Add the garlic and cook for an additional 1 minute. Add all of the remaining ingredients except the Parmesan and bring to a boil then immediately drop to low and simmer for 15 minutes or until the pasta is cooked to your liking. Stir in the Parmesan and serve immediately!

We use our electric blanket to preheat the bed, then turn it off for the night. It is lovely.
I just made the pasta, and it is good, but onion-y. Maybe the onion I used was too big. I think next time I will omit the onion and just go with the garlic. I may try covering the skillet as well, since my pasta is a little more al dente than I would like, even after 15 minutes. It is a great, easy recipe for alfredo! Since I’m the only one in my house who likes alfredo, I appreciate a good and easy homemade alfredo recipe. Thanks! I will be making this again.
