Have you been suffering with blistery cold weather in your parts? We sure have in Minnesota. Space heaters and my fireplace are working overtime in my house with old windows. The west bedrooms in my house are the absolute coldest with the wind that hits them and it is literally unbearable to sleep without some extra heat from a space heater. Just for the record, we are talking negative temps here, not that “cold” 30s-40s that some of you get to enjoy. 😉
To keep you warmed up in the kitchen, we have some amazing comfort food this week. I personally can’t wait for Friday, to enjoy this Smoky Coconut Milk Braised Chicken with Bacon Wrapped Pineapple Spears on the side. Sunday also looks scrumptious with everything from Mexican Pizzas for lunch to a chicken salad with Cranberry Pear Crisp for dessert! We have got something for everyone this week.
