{3 Ingredient} Cheesy Dorito Chicken
I’m back with yet another quick and easy dinner idea! Earlier this week, I shared these 10 Minute Beef & Broccolini Bowls, which I am pretty much obsessed with and thought I would continue with the easy and delicious dinner trend. I mean, is anyone really mad at the idea of having too many easy recipes? I think not friends!
One of my favorite meals growing up was Taco Pie. I still quite enjoy it and it is a favorite of my husband’s. The problem is, the crescent crust alone pretty much breaks the bank for daily carb intake. It is a great treat occasionally, but there is no way I can be making that on a weekly basis.
With this Cheesy Dorito Chicken, I took the best part of Taco Pie, which is the crunchy cheese Dorito layer! A tender chicken breast is stuffed with Laughing Cow Queso Fresco Cheese wedges and coated with Doritos for a quick dinner with amazing flavor and crunch. I topped my chicken with avocados and a bit of lime juice, but salsa and plain Greek yogurt would also be great accompaniments.
Stuffing chicken breasts can seem overwhelming to some, but it really is so easy. I just take a sharp pairing knife and cut a pocket through the edge of the chicken breast. I take a wedge of the Laughing Cow cheese and press it evening throughout the slit and it is easy as that!
For the Dorito crust, if the chips aren’t sticking to the chicken on their own, coat the chicken breast with some non-stick cooking spray first and they will adhere well. After you place the chicken on the pan, sprinkle the tops of the breasts with any extra crumbs for all that great crunch.
In less than a half hour and with only 3 simple ingredients, you will have a delicious dinner that you can enjoy on its own or with some rice or a salad. I promise, you will love it!

Ingredients
- 1 lb. chicken breasts
- 16 nacho Doritos crushed
- 3 wedges Laughing Cow Queso Fresco spreadable cheese
- optional avocado and lime for garnish
Instructions
- Preheat your oven to 375°.
- Using a sharp pairing knife, cut a pocket through the edge of the chicken breast. Take a wedge of the Laughing Cow cheese and press it evening throughout the slit of each breast.
- Coat each chicken breast in crushed Doritos. (*If the chips aren't sticking to the chicken on their own, coat the chicken breast with some non-stick cooking spray first and they will adhere well.) Place the chicken on a lined baking sheet and sprinkle the tops of the breasts with any remaining crumbs.
- Bake at 375° for 20-25 minutes depending on the size of your chicken breasts. (If there are only 2 in the 1lb pack, you will need closer to 25 minutes.)
