Bacon Bleu Cheese & Apple Flatbread
My Mom called me last week and asked me to cook for the weekend and told me I could make some of my “weird shit” because my sister and her husband like that crap. LOL! I happily obliged and kept it relatively simple. I made some delicious Shrimp Tacos for dinner on Friday and and quick and simple Strawberry Salad with grilled chicken breasts for lunch. These Bacon Bleu Cheese & Apple Flatbreads would have made a great option as well, but I was trying to keep things extra light seeing we were going for a brunch buffet at Bello Cucina on Sunday. It’s all about balance!
Happy Belated Mother’s Day to all of you wonderful moms out there! I had the pleasure of spending the weekend with my sister who is a new mother herself along with my parents. We took some newborn photos of my gorgeous two week old niece, we enjoyed good food and we played plenty of games of carbles. All in all it was a great weekend!
Mother’s Day is a bitter sweet holiday for myself. I love my mother and appreciate that she is one in a million when it comes to being there for us. She would do absolutely anything for us and supports all of her children in any way she can. Not only that, but she is one of my best friends. I am truly grateful.
Nonetheless, it is as hard day for myself. I scroll through Facebook and Instagram and watch families celebrating and couple excitedly making new pregnancy announcements. I am able to join along with the happy celebration for the most part, but then a friendly acquaintance sends me a tear-jerker of a message. She wished me the best, knowing exactly how hard this infertility battle can be, and reminded me that one day it will happen for us.
While I may have shed a few tears from the message, it was beyond sweet and nice to be thought of on a day where it is easy to feel defeated. My sister is also beyond amazingly sweet and got me flowers and a sweet card from my favorite niece…aka my only niece! 😉
At the end of the day I am so grateful for the wonderful life I enjoy and the many blessing I have. It is important to remember all the good things that have come my way when I am feeling down about what I haven’t yet achieved.
Bacon, Bleu Cheese & Apple Flatbread
Ingredients
- 1/2 c. whipped cream cheese
- 1/3 c. blue cheese crumbles
- 10 slices pre-cooked bacon chopped
- 2 garlic naan breads found in the deli section
- 1 granny smith apple thinly sliced
- 2 Tbsp. fresh thyme
Instructions
- Preheat yoru oven to 400°.
- Spread 1/4 cup cream cheese on each naan bread and top with bleu cheese and bacon.
- Bake at 400° for 8 minutes. Top the warm naan with fresh apples and thyme. Serve immediately.

These are so good. I’ve made them several times. I use the Costco (non garlic) naan and just sprinkle a little garlic powder over the cream cheese before adding the toppings. I’ve shared these with a lunch group and have several friends who love them now as well!
