Chicken bowls are perfect for those of you in a dinner rut. It happens to the best of us. I know I find myself there more often than not, making the same simple meals over and over.
I crave something different, but don’t always feel overly ambitious to try anything new. These BBQ Chicken & Roasted Sweet Potato Bowls are the perfect departure from your normal dinner routine, but are beautifully simple and easy!
How to Make BBQ Chicken Bowls
Making these healthy bowls is super simple and only requires one sheet pan! To get started, toss the sweet potatoes and onions on a baking sheet and coat them with olive oil, garlic and chipotle powder. If you don’t have chipotle powder you can substitute chili powder or paprika depending on your spice preference.
Baked BBQ Chicken Dinner
After the potatoes and onions have baked for 20 minute, remove them from the oven and add the broccoli and chicken breasts to the pan. Brush the chicken with a little BBQ sauce and bake an additional 15 minutes until everything is cooked through.
Remove the chicken breasts from the pan and allow to cool for a few minutes before shredding them with two forks. Toss the shredded chicken with a little more BBQ sauce. Pile all of the goodness into a bowl and enjoy these delicious BBQ Chicken & Sweet Potato Bowls!

BBQ Chicken & Roasted Sweet Potato Bowls
Equipment
Ingredients
Sweet Potatoes
- 2 medium sweet potatoes
- 1 large yellow onion
- 1 Tablespoon olive oil
- 1/4 teaspoon salt divided
- 1/2 teaspoon garlic powder
- 1/2 teaspoon chipotle powder or chili powder
Broccoli
- 1 medium head broccoli
- 1 Tablespoon olive oil
- 1/4 teaspoon salt
Chicken
- 1 pound boneless skinless chicken breasts
- 1/2 cup BBQ sauce divided
Instructions
- Preheat the oven to 400°F.
- Peel and chop the sweet potatoes into 1/2" chunks. Chop onion into 1 inch pieces and add to a lined sheet pan along with the sweet potatoes. Toss the sweet potatoes and onions with olive oil, salt, garlic powder and chipotle powder and toss until well combined. Bake at 400°F for 20 minutes.
- Toss the sweet potatoes and push to one side of the pan. Add the broccoli and toss with olive oil and salt. Add the chicken breasts and brush with 1/4 cup BBQ sauce. Bake an additional 15-20 minutes at 400°F until the chicken is done.
- Remove the pan from the oven and shred the chicken breasts using two forks. Toss the chicken with the remaining BBQ sauce. Divide the chicken and vegetables between three bowls and serve immediately.

Great, easy recipe. I used frozen broccoli and thawed before roasting. I also seasoned chicken quarters with fresh garlic, paprika and chili powder then lathered with bbq sauce. Chicken was left on seperate sheet pan for 45 min in the 400 degree oven.

It was so awesome. Had it 2 nights in a row 😀; next time though, I’m tweaking it a bit. I’m removing the meat, veggies,
and spices and oil. Then add a stir up and bake brownie mix in its place. Add a cold glass of milk. That’s the only way I think you could improve this delicious meal. 😏

I’m just curious, does the bbq sauce actually provide enough flavor, since the chicken is not being seasoned?

BBQ sauce is essentially a mix of salt, sugar and spices. By all means, feel free to add more spices to the chicken before you rub it with the BBQ sauce for additional flavor if you want it highly seasoned!

I think this will become a regular for us…very good, quick, and easy! I used chicken tenders and set my oven to 425 F. Everything cooked in the time suggested, with my chicken ready in 15 min. I like that using jarred bbq sauce saves so much time and us a great compliment to the sweet potato and broccoli. (Oh, I also left out the Chipotle seasoning.)

This was so simple to make yet so delicious! I actually was making this for myself because I have 2 daughters that are picky eaters but they ended up devouring it. So this dinner will definitely be added into our weekly rotation.
