Brie & Apricot Puffs are an easy and sophisticated appetizer that will impress all your guests and only require four ingredients! I wanted to make something nice to pair with wine for a an appetizer, but didn’t want to slave away in the kitchen making something complicated. I baked up some puff pastry shells, filled them with apricot preserves and creamy brie and threw them back in the oven for a fantastically simple appetizer everyone loved.
I am a sucker for a good appetizer. Quite frankly, I would ideally eat all my meals in small bites such as these. Perhaps add some Asiago BLT Bites and some Caramelized Onion and Parmesan Dip to the table and you’ve got yourself a party!
Speaking of parties, it’s that time of year to start thinking about the holidays. It’s crazy, I know, but first Halloween will be here before we know it, then Thanksgiving and in a blink of an eye we will be celebrating Christmas! Yikes! But, I’ve got you covered with these amazing appetizers as well as so many more on their way.
Brie & Apricot Puffs

Ingredients
- 1 pkg. 10 oz Puff Pastry Shells
- 1 egg beaten
- 1/3 c. apricot preserves
- 4 oz. brie cheese with rind cut off
Instructions
- Preheat the oven to 425°. Arrange the shells on a lined baking sheet and brush with egg. Bake for 18-20 minutes. Remove from the oven and immediately cut the tops off of the shells and set aside. Spoon a Tablespoon of apricot preserves into each shell and top with a slice of brie. Cover with the tops of the shells and return to the oven for 5 minutes or until cheese is melted. Serve warm from the oven.

These brie bites look so good and I bet they taste seriously delicious. I can definitely see myself polishing off a whole lot of these – good thing I have all the ingredients on hand!
