If you are looking for a quick and healthy 5 minute lunch recipe with some spice, this Buffalo Tuna Avocado Toast is a delicious open faced tuna salad sandwich with just 4 simple ingredients!
Buffalo Tuna Salad
Tuna salad is such a quick and easy lunch idea, but sometimes it can get boring with the same old mayonnaise and mustard combination. This Buffalo Tuna Salad puts a spicy spin on the classic and skips the mayonnaise all together. For the creamy goodness that is mandatory in tuna salad, we are using mashed avocado instead.
The end result is a quick and simple 5 minute lunch with only 4 ingredients that tastes delicious. Best of all, it is packed with protein, whole grains and healthy fats!
How to make Buffalo Tuna
For this recipe, we are reaching in our pantry for a package of Buffalo Tuna Creations. Not only does it already take the work out of seasoning the tuna, but it is the perfect portion for one!
If you don’t have the Tuna Creations at your grocery store, you could either order online like I have to, or make your own. A half can of chunk tuna mixed with a couple tablespoons of buffalo wing sauce and you are good to go. Making your own will be the more economical option if you are making more than one tuna salad sandwich.
Open Faced Avocado Toast
You could make this into a sandwich with all the ingredients by adding an extra piece of bread, but it really doesn’t need it. Sure it would make a heartier sandwich, but one piece of toasted whole grain bread is plenty to support the ingredients topping it. It also keeps this tuna sandwich lower carb.
Whether you have a beautiful slice of homemade sourdough or a slice of store bough wheat bread to top, this sandwich will be delicious. Not going to lie though, I sure wish I had my sourdough starter going so I could have a loaf of fresh bread. It would take it to the next level!
Avocado substitution for mayonnaise
The combination of tuna and creamy avocado is obvious when you think about it. Avocado makes a great substitution for mayonnaise in many recipes because of it’s fatty and creamy texture. Much like this Avocado Chicken Salad or Avocado Deviled Eggs, this tuna avocado sandwich is no exception.
Avocados are a healthier option because they are packed full of nutrients. From Vitamin C to fiber and potassium, they are a wholesome fruit that is incredibly filling. Not to mention absolutely delicious!
Assembling Buffalo Tuna Avocado Toast
The absolute best part of this recipe is the fact that it takes less than 5 minutes to make! Grab the following ingredients and you are ready to make a quick and healthy lunch,
- 1 slice bread – I used the Brownberry 12 grain
- 1/2 ripe avocado
- 1 package Buffalo Tuna Creations
- cherry tomatoes
- Buffalo wing sauce – this is optional and just adds more spicy if you like the heat!
Toast your bread and top it with the avocado. Use a fork to smash the avocado onto the toast. Top the avocado with the package of Buffalo Tuna and finish with sliced cherry tomatoes.
If you really like a spicy or saucy sandwich, feel free to drizzle a little buffalo wing sauce over the top for a final touch. I love the extra heat…although my aging body doesn’t always. Flavor over heartburn every day in my book though! lol
