It doesn’t get much better than this chocolate chip Cast Iron Skillet Cookie for an easy and absolutely delicious dessert recipe. A chewy salted chocolate chip cookie is caramelized around the edges from a cast iron skillet for the perfect texture.
Chocolate Chip Skillet Cookie
One of my favorite desserts in childhood was a warm piece straight from the pan of Chocolate Chip Cookie Bars. I always made sure I snagged the corner piece from my siblings as well.
That caramelized edge that was perfectly chewy along with meted chocolate chips in the soft center was and still is perfection. This Cast Iron Skillet Cookie takes it to the next level, offering every single piece the wonderfully caramelized edge.
Edges are the best part of bars
If you are a center of the pan bar kind of person, this recipe probably isn’t for you. If you love the edges like so many of us, then you’ve got to make your chocolate chip bars this way from now on!
Instead of buying some funky pan that produced every piece with all the edge goodness, just whip out your handy cast iron skillet. Not only is it better, it’s much healthier as well. There is no Teflon to deal with and it adds a small amount of iron to your diet every time you cook with cast iron!
Preparing Cast Iron for Baking
To get started, give your well seasoned cast iron pan a light wash. Yes, you can wash your cast iron with soap! Don’t believe the myth that you can’t. As long as it is well seasoned, a little soap and a light scrub won’t do anything besides clean off the cooked on grime.
We don’t exactly want our cookie tasting like fried onions or chicken here!
Do I need to pre-heat my cast iron pan?
If you’d like to preheat your pan, you certainly can. You will just need to keep a close eye on it, as it will cook a bit faster than the times listed here.
We prefer to bake with our cast iron without preheating it. It’s easer to spread the dough in the pan without getting burnt, and you still get the same great result.
Coating Cast Iron for Baking
My cast iron is really well seasoned and honestly it doesn’t need any sort of cooking before baking chocolate chip cookies.
You can give it a quick spray with baking non-stick spray or rub it with butter if you are concerned the bars may stick though.
Skillet Chocolate Chip Cookie Dough Recipe
Just like chocolate chip cookies, this recipe is incredibly easy and comes together in just minutes. In a large bowl, beat the following,
- 1/3 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup salted butter softened
When the butter and sugars are blended well, mix in 1 teaspoon vanilla extract and 1 large egg. Then add the dry ingredients to a separate bowl and give them a quick whisk.
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/4 cup flour
Reserve a 1/4 cup chocolate chips and fold the remainder into the pan. Press the cookie dough into the cast iron pan and sprinkle with reserved chocolate chips.
Baking a Skillet Chocolate Chip Cookie in Cast Iron
Bake the skillet cookie at 375° for 15-20 minutes. When the edges are golden brown and the center is cooked through, carefully remove the pan from the oven and allow to cool for atleast 10 minutes.
Cast iron retains heat much longer than a standard aluminum pan, so be careful before digging into the bars and make sure the pan is cooled. If you just can’t wait, grab and oven mitt and scoop out a piece carefully.

Cast Iron Skillet Cookie
Equipment
Ingredients
- 1/3 cup granulated sugar
- 1/2 cup packed brown sugar
- 1/2 cup salted butter softened
- 1 teaspoon vanilla
- 1 egg
- 1/2 teaspoon baking soda
- 1 teaspoon sea salt
- 1 1/4 cup flour
- 10 ounce package dark chocolate chips
Instructions
- Preheat oven to 375°F. If your 10 inch cast iron pan isn't well seasoned, spray it with baking non-stick spray or coat with the thin layer of butter.
- In a medium bowl, beat the sugars, butter and vanilla extract. Add in the egg and blend until just combined.
- Add the flour, baking soda and salt to a medium bowl and whisk. Mix the dry ingredients into the wet ingredients just until well combined.
- Reserve 1/4 cup chocolate chips and mix in the remaining chocolate chips. Spread the dough in a 10 inch cast iron skillet and top with reserved chocolate chips.
- Bake at 375° for 15-20 minutes until the center is fully cooked.
- Allow to cool to room temperature before serving.
