Sweet Corn Fritters
If you are looking for a great side dish for some grilled steak or pork then you’ve got to try these cheesy sweet corn fritters. They are a great way to use up that sweet summer corn.
I used my favorite cast iron skillet to sauté up these corn fritters. They resulted in a crunchy outside with a fluffy and tender inside studded with crunchy sweet corn and creamy cheddar cheese.
Easy Griddle Recipe
If you have a griddle that you love cooking on, these corn fritters would be a fantastic recipe to make outdoors camping or just enjoying dinner in the backyard. I recently purchased a griddle outside to go along with my Traeger pellet smoker.
Now I can make just about any meal outside in the backyard while the kids are playing on the swing set. I love the convenience of cooking on the griddle, not to mention how great everything turns out!

These sweet little cakes aren’t limited to a side dish though. Corn fritters can absolutely be the highlight of any meal! Add in 1/2 cup cooked bacon, ham or sausage for a complete breakfast recipe that the whole family will love or serve the breakfast meat on the side with some eggs.
Whichever route you choose, your family or guests will be impressed with these fritters and have no idea how easy they are to make!

They are also great all on their own as a vegetarian meal. Serve them with a light salad of mixed greens, fresh vegetables and roasted garlic and lemon dressing and you have the perfect meatless dinner.

How to make sweet corn fritters
To get started, you will need to grab a few basic ingredients from your pantry as well as some fresh produce. Here is what you will need to make sweet corn fritters.
- 2 Tablespoons melted butter
- 2 large eggs
- 1/4 cup milk
- 1/2 cup flour
- 1/2 teaspoon salt
- 3/4 teaspoon baking powder
- 1 cob of sweet corn
- 2/3 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 Tablespoon diced chives
To a large bowl, add the melted butter, milk and eggs. Whisk until the eggs are beaten well. Add in the dry ingredients and mix just until combined.
Fold in the sweet corn cut off the cob, cheddar, Parmesan and chives. Mix just until combined and set aside for a minute while you heat up your cast iron skillet or griddle to medium high heat with a drizzle of olive oil or pat of butter.
It’s important to use the batter with baking powder within about 20 minutes of preparing it, or you will loose some of the leavening power.
How to make crispy fritters
When the pan and oil is hot, add 1/2 cup of batter for each fritter. Space out the fritters a few inches from one another to allow them to expand a little and so they aren’t overcrowded. Overcrowding the pan will cause the temperature of the pan to drop and the fritters won’t get nice and crispy.
Cook on each side for 2-3 minutes, or until golden brown. Remove from the skillet and place on a platter. This recipe will make about 6 larger corn fritters. Serve immediately!
How do I tell if fritters are cooked
It’s important that your pan is hot and the oil will sizzle as soon as the batter hits the pan. You can add a little teaspoon of batter to the pan to make sure it is ready before cooking all your fritters.
When the fritters start to bubble on the top, after 2-3 minutes, it’s time to flip them. Brown the other side and you will have perfectly cooked fritters.
Can I reheat corn fritters
These cheesy corn fritters are always best served fresh. If that isn’t possible or you have a couple leftover, you can reheat them for a quick and easy meal.
You don’t want to add them back to direct heat on a skillet or griddle though, or it will overcook the outside while not warming the center through all the way. The microwave will just leave them soggy.
The best way to reheat fritters is with the oven or ideally an Air Fryer or toaster oven. Pop them in a hot oven for about 10 minutes to heat them through and re-crisp the outside a little bit.

Cheesy Corn Fritters
Ingredients
- 2 Tablespoons melted butter
- 2 eggs
- 1/4 cup milk 2% or whole
- 1/2 cup flour
- 3/4 teaspoon baking powder
- 1/4 teaspoon salt
- 2/3 cup grated cheddar cheese
- 1/4 cup grated Parmesan cheese
- 1 cob of sweet corn husked*
- 1 Tablespoon chives
Instructions
- In a large bowl, whisk together the melted butter, milk and eggs. Add in the flour, baking powder and salt and mix just until combined.
- Fold in the Cheddar, Parmesan, sweet corn cut off cob and chives. Fold just until combined.
- Heat a skillet over medium-high heat. Add a drizzle of olive oil or a pat of butter.
- When the oil is hot and fragrant, scoop 1/2 cup batter into pan to form fritter. Space them out so they aren’t overcrowded.
- Cook the fritters for 2-3 minutes or until golden brown on the bottom and bubbles are forming on top. Flip the fritter and cook for an additional 2-3 minutes or until golden brown.
- Remove from the pan and repeat with remaining batter. Serve hot.
