Chipotle Chicken Salad Stuffed Avocados
These chicken salad stuffed avocados embody summer just as much as the flower and herb gardening I did this week do! I stopped by our local nursery a week ago and picked out some of the prettiest flowers along with my go-to herbs. I was itching to get them in the ground so I could enjoy all the beautiful colors, but the Minnesota weather wasn’t cooperating just yet. The freezing weather finally seemed to be behind us yesterday, so I was beyond excited to put all my new OXO gardening tools to good use planting the flower beds at our new house!

I had a few cheap old trowels and a dingy watering can around the farm that I made due with, but I was in desperate need for some upgraded tools. This new watering can is not only cute with the bright blue color, but the spout folds up for convenient storage. The trowelwas an obvious must-have for planting any of my pre-potted plants. I don’t have the patience to start anything from seeds, so I buy all my herbs and flowers in full bloom. 🙂
My husband had tilled the flower beds before I got started so I didn’t think I would have to prep the ground much. Once I got started I quickly realized there was lots of tilled grass and other debris that needed to be removed from the beds as well as some deeper weeds he missed. I used the gardening plow to leverage my power against the deep rooted weeds and they were quickly defeated and disposed of.
The OXO gardening rake was surprisingly my favorite tool of all. Initially I just thought it was cool because it was adjustable and could fold down to a narrow short rake or out to a long wide rake. Once I put it to work, cleaning up the debris on the soil, I quickly fell in love with how easily it did the job. It wasn’t a tool I would have ever thought to buy, but now that I have it, I wouldn’t want to live without it!
I just love coming home and pulling into my yard with these pretty flowers planted in the front yard. I am far from a girly girl, but there is just something about bright colorful flowers that makes me smile. Once they are well established, I like to sneak a few blooms to brighten up my kitchen.
These herbs also make me so completely happy! The smell of sweet basil alone is enough to make it feel like summer, despite the colder temps and blazing winds. I can’t wait to utilize the basil on this Strawberry Basil & Honey Goat Cheese Quesadillas and Sweet Corn Caprese Pizza. The thyme is perfect for this Caramelized Onion & Parmesan Dip and the sage will get put to good use this fall in a variety of squash recipes.
Chipotle Chicken Salad Stuffed Avocados
Ingredients
- 1 c. cooked chicken cubed
- 1/3 c. onions diced
- 1/4 c. bell pepper diced
- 1/3 c. tomatoes chopped
- 1/3 c. chipotle sauce 1/3 of sauce
- 2 avocados
chipotle lime sauce
- 2/3 c. non-fat plain greek yogurt
- 1/4 c. mayo
- 1 Tbsp lime juice
- 1 chipotle pepper in adobe
- 1 Tbsp adobe sauce
- 1/2 tsp salt
- 1 tsp garlic finely chopped
- 1 tsp cumin
Instructions
- Toss all of the chicken salad ingredients in a small bowl until all of the chicken and vegetables are well coated with the chipotle sauce.
- Halve and remove the seeds from the avocados. Slice a small piece off the bottom of each half so the avocado sits flat.
- Spoon the chicken salad mixture into each avocado half and serve immediately.
