Like so many others, I was on the hunt for a healthy and easy breakfast idea. When it comes to breakfast, it often seems that it is one or the other. Easy breakfasts are readily available in the form of pop tarts, cereal, fast food, etc. Healthy options like these quick like Microwave Scrambled Eggs are more difficult to come by and most recipes usually entail firing up your oven.

I saw some Ore-ida Just Crack An Egg kits in the grocery store and it was just what I was looking for. I loved the idea of just adding an egg to the ingredients already included in the cup and popping it in the microwave for a minute.
Jimmy Dean Simple Scrambles
I bought a few different varieties as well as some Jimmy Dean Simple Scrambles which include the egg, and gave them a try.
They tasted good and were super easy! The only hangups that I had with them were that they were a little expensive for so little food, full of wasteful packaging and not using the freshest ingredients.
I realized I could easily make my own Microwave Scrambled Egg Cups with leftovers I already had in my refrigerator and some fresh herbs from my window herb garden!
How to Make Eggs in the Microwave
Like anything else in my life, I love a good variety in anything I eat. I could have just made a copycat recipe for the All American kit with bacon, cheese and potatoes, but that wouldn’t suffice. I came up with the following 7 varieties in these easy scrambled egg recipe cups.
These Just Add an Egg varieties provide lots of inspiration for different ways on how to make eggs in the microwave. They serve as pallets but you can certainly dream up your own combination. The general recipe for each scrambled egg cup is potatoes, cheese and meat. From there you can add in some fresh vegetables or herbs for more flavor and spice.

Whether you have leftover ham or sausage in your refrigerator that you need to use up or you choose to buy some pre-cooked bacon, this Microwave Breakfast of scrambled egg cups are a great use of leftover meat, potatoes and vegetables.
Buy a bag of pre-cooked hash browns or American potatoes and toss in some shredded cheese and you have healthy breakfast cups prepped for the week!
Build Your Own Microwave Breakfast Bowl
The best part about these easy Microwave Scrambled Eggs is that you can decide whether you want to add one or two eggs. If you are really wanting to double down on your protein in the morning, add an extra egg and just cook it for an additional 20 seconds.
This makes for an extremely hearty and healthy breakfast bowl that you can pop in the microwave before you leave the house or make in the microwave in the office break room.
Mason Jar Microwave Scrambled Eggs
If you plan on only using one egg for these scrambled egg cups, half pint mason jars are the perfect fit. If you are thinking you might add an extra egg to the mix, you will want to opt for a larger pint jar to allow enough room for everything to cook properly.
I prepped some of these easy breakfast cups in half pint jars for my Dad and while he really liked them, he sent me a picture of eggs overflowing in the microwave after adding two eggs. Don’t make the same mistake he did and be sure to use a large enough jar!
Easy Breakfast Meal Prep
You can choose how many scrambled egg cups you want to prep. Whether you just make one to give them a try, or make a batch of 7 for the week, they are easy to assemble and even easier to cook!
If you are buying ingredients specifically to make these egg cups and not just using the leftovers you have on hand in the refrigerator, I recommend making several of the same variety. This way you won’t be wasting fresh ingredients.
Can you cook eggs in the microwave?
Follow one of the recipes below for your variety of scrambled eggs you can cook in the microwave. Add all of the ingredients except the egg to your glass jars and seal with the lid. Store refrigerated for up to a week.
When you are ready to make a quick breakfast, just open the jar and add an egg. Mix everything together with the egg, microwave for 30 seconds and give them another quick stir.
If you are using one egg, microwave for an additional 40 seconds and if you are using two eggs, microwave for an additional 60 seconds. Carefully remove the eggs from the microwave using an oven mitt or towel and your scrambled eggs are ready to enjoy!

Do you have to grease the mason jar? I was wondering about using Pam cooking spray? I do love the Crack an Egg idea – but have had the same experience as you – expensive (gulp) and want to control variety. Thanks much!

Honestly you are going to have to scrub either way seeing it is eggs, but a little pan spray will makes things a bit better.

You could freeze everything except the eggs. As for jars, you could use plastic, but lots of people aren’t fans of heating food in plastic.

I am very confused by what you mean by precooked potatoes. the simply potatoes are not cooked. So do I need to cook them before I put them in the jar?

The Simply Potatoes are par-cooked. If you used a raw potato, they would still be raw after the short cooking time.

I also want to use the oreida frozen diced potatoes. I see you sat to cook first but curious as to what they do with the ones on the “just crack an egg”? They don’t look cooked or at least not fried (browned). How should I cook/prepare them so I can do meal prep and freeze a bunch at a time

I believe the Oreida potatoes are already cooked. I just mean you shouldn’t use a raw potato you cut up. If you are buying packaged hash browns or diced potatoes, they are almost always already cooked some.
