At that price, I can let my kids enjoy one for breakfast as often as they’d like. And let me tell you, they beg for them, so they fly out of my freezer very quickly!

The best part of these freezer breakfast sandwiches, is that you can customize them to make them your own. We make our sandwiches healthier with a Greek yogurt waffle recipe. This cut back on the calories and added extra protein. I also use Fairlife ultra-filtered skim milk for higher protein.
If you want to make these even healthier, you can swap out the bacon for some Canadian bacon. Personally, it’s only one slice of bacon, and the added flavor is totally worth it for us.

How to Make Greek Yogurt Nordic Waffles
We are using a Nordic waffle style recipe for these breakfast sandwiches, because they are nice and thin. A thick waffle wouldn’t fold nicely and it would be too much bread to filling ratio.
To make them healthier, we swapped out the sour cream for plain whole Greek yogurt and cut back a little on the butter. If you aren’t concerned about the nutrition, you can go ahead and make a supper rich waffle with an entire stick of butter.
Mix the eggs and sugar in a large bowl and stir in vanilla, milk and Greek yogurt. Add the flour, baking soda, baking powder, and salt.
Plug in your Nordic Waffle Maker and when it’s heated, brush it with melted butter or spray it with non-stick cooking spray. Pour a scant 1/2 cup batter onto the waffle iron and close it. Cook for approximately two minutes per waffle, or until it is lightly golden brown.
Set the waffles on a baking sheet and fold them in half. This helps crease them so they fold nicely for the sandwich. After all the waffles are cooked, open them up so they can cool completely. The crease will still remain.

A good sharp cheddar is what the original sandwiches call for, but feel free to be creative with your cheese selection. Havarti, Muenster, White Cheddar and just about any slice cheese is a great option. I wouldn’t personally go for American cheese, but I’m just not a big fan in general.
My new favorite cheese for these sandwiches is goat cheese! It adds SO much flavor and compliments the slightly sweet waffle and salty bacon so well. I like to slice a 4 ounce block of goat cheese into 8 pieces and set them on a plate. I microwave them for 15-20 seconds to soften them just enough so they are easily spreadable.
Spread the soft cheese over one half of the waffle and add your eggs and bacon. It freezes and thaws just as wonderfully as the harder cheeses.

- COOL the waffles, bacon and eggs to room temperature before assembling the sandwiches.
- SLICE the sandwich in half before freezing. This makes it way easier to evenly reheat.
- STACK the sandwiches by placing a small piece of parchment paper between each one.
- STORE the sandwiches in quality freezer bags and suck out any excess air before sealing.
How to Reheat
Reheating these waffle breakfast sandwiches is where the real magic happens. Sure, you can just microwave them, but then you end up with a soggy waffle and that is not very good.
Reheating Waffle Breakfast Sandwiches
- THAW in the microwave on a plate for 60-90 seconds, until the center is ALMOST thawed.
- AIR FRY for 6-7 minutes, until the waffle is just slightly toasted and the center is hot.
If you don’t have an Air Fryer, a toaster oven works great as well. The dry heat really helps perfect the texture that you can’t get from just microwaving though.
One really amazing aspect of these freezer waffle breakfast sandwiches is that they actually taste better reheated! I know that is hard to believe, but the Air Fryer gives the outside of the waffles a wonderful crispiness that you can’t achieve in the initial cooking stage.

- 3 large eggs
- 1/4 cup sugar
- 1 1/2 cups skim milk
- 1 cup plain whole Greek yogurt
- 2 teaspoons vanilla extract
- 1/4 cup butter melted cooled
- 2 cups flour
- 1 teaspoon salt
- 1 teaspoon baking soda
- 1 teaspoon baking powder
Breakfast Sandwiches
- 12 eggs
- 6 slices sharp cheddar cheese
- 12 slices baked bacon
Instructions
WAFFLES
- Mix the eggs and sugar in a large bowl and stir in vanilla, milk and Greek yogurt. Add the flour, baking soda, baking powder, and salt.
- Spray your heated Nordic Waffle Maker with non-stick cooking spray before cooking EACH waffle. Pour a scant 1/2 cup batter onto the waffle iron and close it. Cook for approximately two minutes per waffle, or until it is lightly golden brown.
- Set the waffles on a baking sheet and fold them in half to crease them. After all the waffles are cooked, open them up so they can cool completely.
BREAKFAST SANDWICHES
- Meanwhile, while the waffles are cooking, add the eggs to a 9×9 sprayed non-stick pan. Use a fork to crack each yolk. Season with salt and pepper and bake at 350F for 20 minutes, or until all the eggs are set.
- When all the ingredients are cooled to room temperature, slice the pan of eggs in half. Slice 12 long strips of eggs from the pan of eggs.
- Top each waffle with a piece of egg, half slice of cheese and one slice of bacon.
- Slice the sandwiches in half in store in a resealable bag. Suck out all the air before sealing and storing in the freezer for up to 3 months.
