Can you believe it is East this coming weekend already?! It feels like not that long ago it was just the winter holidays, and here we are celebrating spring holidays. I think the winter flew by so fast because we experiences such a mild and comparatively warm season. Usually we suffer through sub-zero temps most of winter, but this year we were basking in the warm 20s & 30s for the majority of the time.
This nice weather has also resulted in an exceptionally early spring. There is no longer snow on the ground and we will actually be able to have an Easter egg hunt outside. I literally can’t remember the last Easter that was this nice weather wise! We have some delicious and healthy meals to get you through the holiday including one of my favorite treats, Light Coconut Cream Cupcakes. With fresh fruit ears, these cupcakes are so adorable and for an added bonus, lightened up with coconut cream and milk!
