My family enjoys a large Prime Rib for the holidays every year, but we are always afraid of running out so we order too much every single time. Despite the guys doing their best to eat as much as humanly possible along with the cheesy potatoes and Pomegranate Apple Salad, we are still left with some prime rib at the end of the night. This prime rib pasta is the perfect way to enjoy a quick weeknight dinner with the leftover ribeye roast.
How to cook leftover Prime Rib?
When you are cooking your ribeye roast, aka Prime Rib, you should always aim for medium rare. We use this technique for Garlic Butter Prime Rib where we cook the meat for 4-5 minutes per pound at 500°F, turn the oven off and don’t touch it for 2 hours.
This prime rib recipe leaves you with the most tender and flavorful medium-rare Prime Rib. We’ve done this more than five years and have had success every single time!
If you cooked your Prime Rib to medium rare or rare perfection , it will be amazing tossed in pasta with a creamy white wine sauce! You just want to add the meat at the end of the cooking process, just so it heats it through a bit. If you cook it too long, you will end up with well done Prime Rib.

How to make Creamy Prime Rib Penne
This easy pasta recipe only requires seven simple ingredients in addition to butter, salt and pepper. It comes together in less than 20 minutes and here is what you will need to get started,
- Butter
- Green onions
- Garlic
- Black pepper
- Salt
- White wine
- Heavy cream
- Parmesan
- Penne pasta
- Leftover Prime Rib
Get your penne pasta cooking according to package directions until it is al dente. While the pasta is cooking, add butter to a skillet over medium high heat. Sauté the whites of the onions and garlic seasoned with salt and pepper.
Deglaze the pan with white wine and cook until it is reduced by about half. Reduce the heat to medium and stir in the cream. Cook for a couple minutes until it thickens just slightly. Stir in the Parmesan, drained pasta and leftover Prime Rib.
Remove the pan from the heat and stir just until the pasta is well coated and the meat is warmed through. Stir in the green onions and serve with additional Parmesan.
What if I don’t have Prime Rib?
If you aren’t fortunate enough to have leftover Prime Rib sitting in your refrigerator, you can also enjoy this delicious pasta in white wine cream sauce with steak. Grab a New York Strip, Ribeye or Sirloin or whatever your favorite cut is.
Season it with some salt and pepper and cook in your skillet until medium rare. Remove the steak and allow it to rest. Add the onions and garlic and the white wine will deglaze the pan and add even more bits of flavor from the cooked steak.
Steak and Pasta in White Wine Cream Sauce
While it might seem easier to just toss some pasta with a jar of Alfredo sauce and your leftover Prime Rib, there is no excuse not to make this easy white wine cream sauce. Not only is it a light and delicious compliment to the pasta and steak, but it’s the perfect excuse to crack open a bottle of your favorite white wine!
Whatever you do, avoid the “cooking wine” in the grocery store. There isn’t anything good coming from those bottles next to the vinegars. If you aren’t a wine drinker, make a quick trip to the liquor store and grab a four pack of mini bottles of wine.

Leftover Prime Rib Pasta in White Wine Cream Sauce

Ingredients
- 8 ounces penne pasta 1/2 box
- 1 Tablespoon butter
- 1 bunch green onions
- 1 Tablespoon diced garlic
- 1/4 teaspoon black pepper
- 1/2 teaspoon salt
- 1/2 cup white wine
- 1 cup heavy cream
- 1/3 cup grated Parmesan
- 8-10 ounces leftover prime rib about 1 1/2 cups
Instructions
- Dice the green onions and separate the whites from the greens. Cut the leftover prime rib into 1/2 inch pieces.
- Cook the pasta according to the package directions until it is al dente.
- Meanwhile, in a skillet over medium high heat, sauté the whites of the onions in butter for 2 minutes. Season with salt and pepper and add the garlic. Sauté for 1 minute.
- Stir in the white wine and cook for a few minutes, until it is reduced by half. Reduce the heat to medium and stir in the cream. Cook for a couple minutes, until it thickens just slightly. Taste the sauce and season with additional salt and pepper to taste.
- Stir in the grated Parmesan and green tops of the onions. Remove the skillet from the heat and add the drained pasta and the leftover prime rib. Stir just until the pasta is well coated and the meat is just warmed through. Serve with additional Parmesan.

We used this recipe but changed it a bit to match my husband’s taste and mine. We used half the heavy cream, added a beef bouillon cube, a cup of water and a cub of fresh broccoli. The last few minutes we added stir fry frozen veggies and a teriyaki sauce. Made rice instead of the pasta. Plus a hint of teriyaki curry. So more of an Asian twist and I had to stop myself from eating.
