The best part about this particular recipe for Light Apple Cider Vinaigrette, is that it is made with pantry staples, so it has a longer shelf life than dressings made with fresh ingredients like citrus or yogurt. This salad dressing will store in your refrigerator for a few weeks. Just be sure to give it a good shake before using it each time.
Light Apple Cider Vinaigrette
Ingredients
- 1/3 c. olive oil
- 2/3 c. Apple Cider vinegar
- 2 Tbsp. honey
- 1 tsp. Dijon mustard
- 1/4 tsp. salt
Instructions
- Combine all of the ingredients in a blender and blend until smooth. Store refrigerated after using.

I thought this was too vinegar-y. I think next time I’ll flip the ACV and oil amount. I couldn’t stomach it and made the salad so sour.

Everyone’s preference for tartness vs. sweetness is different. If you find it too tart, there is no need to increase oil, but instead reduce the vinegar a bit or add more honey.
