Broccoli Coleslaw Recipe
If you aren’t familiar with broccoli slaw, it is similar to coleslaw, but much crunchy and has a bit more flavor. You can find a bag of broccoli slaw in the refrigerator section near the bagged broccoli florets. Depending on your grocery store, it also may be near the bagged salads and coleslaw.
I like to add it to my coleslaw recipes for way much crunch. It holds up much better and stores in the refrigerator wonderfully. We love it in this Thai Peanut Crunch Slaw as well.
Bleu Cheese Broccoli Slaw
Ingredients
- 1.5 c. Broccoli slaw
- 1.5 c. coleslaw mix
- 1/2 c. Green onions diced
Bleu Cheese Dressing
- 1 cup non-fat plain Greek yogurt
- 2 Tablespoons light mayonnaise
- 1/4 cup skim milk
- 1 teaspoon Worcestershire sauce
- 1 teaspoon red wine vinegar
- 1/2 cup bleu cheese crumbles
- 1/3 cup celery diced
- 1/4 teaspoon salt
- pinch of pepper
Instructions
- In a medium bowl combine all of the dressing ingredients. Whisk until well combined.
- Add the remaining ingredients and toss until well combined. Refrigerate covered for 2 hours before serving.
