Light Cranberry Turkey Quesadilla are a healthy and easy meal perfect for using up all of that leftover turkey from Thanksgiving! Fill a light tortilla with turkey, Havarti cheese and green onions and top it with cranberry salsa for a delicious and unique dinner after the holidays!
Light Cranberry Turkey Quesadilla
I know, it isn’t even Thanksgiving but I am already sharing ways to use up those leftovers. We all know we are going to have a fridge full of turkey, stuffing, corn, etc. If you are anything like me, you make far too much food for your holiday guests to ensure you don’t run out. This means we all need to come up with creative ways to use up those leftovers the next day. Some of my favorites include this Leftover Thanksgiving Turkey & Cranberry Aioli Sandwic, this Creamy Chardonnay Turkey Crescent Braid and now this Light Cranberry Turkey Quesadilla.
This year I am obsessed with my Spicy Cranberry Salsa, so I decided to put it to good use with leftovers. The obvious choice to pair with any salsa is a quesadilla of course! A light and crispy tortilla is filled with leftover turkey, a little bit of creamy Havarti cheese and some fresh green onions. Top it with a spoonful of the Spicy Cranberry Salsa and you have a spectacularly easy meal after the holidays that you can feel good about!
Light Cranberry Turkey Quesadilla
Ingredients
- 1 light tortilla I love the Tumaro's brand
- 1/2 c. leftover turkey or rotisserie chicken
- 2 oz. Havarti cheese shredded or thinly sliced
- 1 green onion diced
- 1/4 c. Spicy Cranberry Salsa
Instructions
- Spready the turkey, cheese and green onion across one half of the tortilla. fold in half and spray each side with non-stick cooking spray.
- In a saute pan or grill over medium heat, cook on each side for 2-3 minutes, or until browned.
- When the quesadilla is browned and the cheese is melted, removed from the heat and slice into three wedges.
- Served immediately with cranberry salsa.
