Light Tex Mex Thin Crust Pizza is a light and easy vegetarian recipe for one, that tastes amazing and leaves you feeling satisfied! A Flat Out Thin Crust Flatbread is topped with refried beans, queso fresco and loads of fresh veggies for a quick and healthy meal that will easily be one of your favorite new go-to’s on hectic weeknights!
Essentially, this pizza was thrown together with what I had on hand. A half cup of thawed corn in the fridge, heirloom tomatoes from my latest Bountiful Basket, Flatbreads from one of my latest shopping trips to Target, a can of refried beans in the pantry and some leftover green chilis from chicken verde nachos.
Whether you want to add some black beans or grilled chicken for additional protein or any veggies you happen to have on hand, this is a versatile and delicious dinner that you can whip together in no time.
Light Tex Mex Thin Crust Pizza
Ingredients
- 1 Flat Out Thin Crust Flatbread
- 1/3 c. refried beans
- 1/4 c. chopped green chilis drained
- 1/4 c. corn
- 1 oz. queso fresco approximately 1/4 c.
- 1/2 c. tomatoes chopped
- 2 Tbsp. green onions
Instructions
- Preheat oven to 350°.
- Spread refried beans on flatbread and top with green chilis, corn and queso fresco. Bake at 350° for 10 minutes. Top with tomatoes and onion and serve immediately.
