Pressure Cooker Turkey Verde & Rice
Turkey tenderloins are such a healthy protein with only 100 calories and 1g of fat per serving. They are the perfect way to make a light low-fat meal while infusing your flavors of choice. For this Pressure Cooker Turkey Verde & Rice l I used a jar of salsa verde to add some bold flavor to this quick and simple meal in my 5-in-1 cooker. I bought my pressure cooker about five years ago and never really used it much seeing I originally bought it just for it’s slow cooker function. At the time I bought it, I didn’t really know how to use it, so it sat in the closet and collected dust.
Now that Instant Pots are all the rage, I have taken it out of the closet and it’s been put to good use. I have made everything from Thai Peanut Chicken and Noodles to BBQ Pork and now this healthy turkey and rice dish. There is basically nothing better than an easy meal all made in one dish! One of my favorite things in life is cooking while making very few dishes and this dish is a real winner in that department, not to mention how great it tastes!
The absolute best part about pressure cooking is that it leaves your meat beyond tender. You will be amazed at how juicy and tender this turkey loin is when you slice into it. The flavors of the salsa verde infuse the turkey lightly for a little kick along with the brown rice. Add a bag of steamed veggies and you have a complete meal deal that the whole family will enjoy.

Pressure Cooker Turkey Verde & Rice
Ingredients
- 2/3 c. chicken broth
- 1 1/4 c. long grain brown rice
- 1 small yellow onion sliced
- 1 1/2 lb. Jennie-O turkey tenderloins
- 1/2 c. salsa Verde
- 1/2 tsp. salt
Instructions
- Add the chicken broth and rice to your 5 or 6 quart Instant Pot. Top with the sliced onions, turkey and salsa verde. Sprinkle with salt and close the lid.
- Close the vent to “pressure cooker” mode and set on high for 18 minutes.
- When the timer beeps, and the cooking is complete, do NOT open the lid. Let the pot sit for 8 additional minutes. After 8 minutes turn off the Instant Pot, open the lid and the turkey and rice is ready to serve.
- Optional – garnish with fresh cilantro.

For those having problems locating the turkey tenderloins, if you have Food Lion grocery stores nearby, they carry Butterball All Natural Turkey Tenderloins.

Yes, I would double the liquid and even add an extra splash to account for the liquid you get off the turkey.

Hello, after the pressure cooking is done, do you release the pressure valve first, then let sit for 8 minutes, or do you let sit for 8 minutes without releasing pressure at all? Thank you!

Let it set for 8 minutes and then release the pressure.

Can I substitute Jasmine rice instead? If so, does it change the cooking time/liquids?

No, because white rice will be done much sooner and therefore overcooked and mushy.

Regular salsa will have a different flavor but should work fine. Perhaps add some like juice to balance the sweetness of regular salsa.

This is an absolutely fabulous recipe – dee-lish!!!! And EASY. Thanks for posting this one. I didn’t have any rice on and so I cooked the turkey only. The “gravy” was delicious served over skinny mashed potatoes. The turkey itself is very low in weight watchers smartpoints. You just count the turkey ( and in my case the mashed potatoes). Everyone enjoyed this meal immensely. Perfect.

Hi! I wanted to try this recipe but couldn’t find the turkey tenderloin at any of my local stores. Would 1.5 pounds of chicken breast work as well? Should I reduce the cooking time?

Chicken breasts will probably be overcooked in 18 minutes unless they are huge. I would opt instead for a pork tenderloin if you can’t find turkey. Reducing the time isn’t an option because it is important for the rice to be cooked right.

I can’t find turkey tenderloins anywhere. Will thick turkey cutlets work? Do I need to adjust the time? Also, not cooking rice with it. How will that effect the time?

I have found the tenderloins at places like Walmart and Target if you are looking. Cutlets should work but would require a bit less cooking time. The rice won’t effect the cooking time but you won’t need as much liquid as most of that is to cook the rice.

I’m new to the Instant Pot family…so I tried this recipe first! After my initial trial of boiling eggs!!
So I was surprised that after 18 minutes and then the 8 minutes-I opened my pot and the rice was not cooked and the turkey wasn’t cooked either.
What did I do wrong? I don’t want to get discouraged on my first try…Thanks for your help!

Was the turkey completely raw or just in the center? Did you use a 1.5 pound turkey tenderloin and high pressure? Either way, I find that pretty surprising that your rice wouldn’t at least be cooked after that amount of time. If everything was still raw, that sounds like an issue with the Instant Pot.

Can I use frozen turkey with same cooking time?

No, frozen turkey wouldn’t work great because you would need to increase the cook time which would effect the rice as well.

The rice burned on the bottom. We followed the directions except for leaving it in the IP for 2 additional minutes (forgot). Could that be why it burned?

It is not enough liquid! Followed your recipe exactly – My instant pot read “burn” and cancelled the cooking with a burnt area of rice in the middle and on the bottom. You’ll probably need twice as much liquid for the rice.

Mine as well, I figured since it was in a pressure cooker it wouldn’t matter. I will add additional broth next time as well as extra verde sauce, other than that the recipe was a hit.
