Sure, some roasted asparagus with olive oil and a little lemon juice is always a great side dish, but sometimes you want to take it up a notch and add some great flavors.
I struggle to get my veggies on my plates at times, but when I whip up something like this Caesar asparagus, there is no question I will enjoy a healthy helping! Serve it up alongside some Balsamic Chicken or Smoked Pork Loin for a wholesome meal that the whole family will enjoy.

How to make Roasted Asparagus with Caesar Dressing
You will want to preheat your oven to 425°F. We want a hot oven so the Asparagus can caramelize a bit without becoming mushy. No one wants soft and mushy asparagus!
How to trim asparagus
If you are new to making asparagus, you will want to note that it is important to trim the light ends of the asparagus stalks. They are woody and don’t taste so great. Some people like to bend and snap the asparagus, but honestly that leaves a lot of good asparagus wasted.
Place your bunch of asparagus on a cutting board and line up the ends together. Chop off right where the stalks turn from white to green. This will get rid of the woody and tough pieces and leave you with all the good asparagus you paid for!
Roasted Caesar Asparagus Ingredients
Now that your oven is preheated and your asparagus is trimmed and washed you are ready to make this easy side dish recipe. You will just need a few simple ingredients in addition to a bunch of asparagus. Here is what you should grab from your pantry,
- Olive oil
- Salt
- Cracked black pepper
- Greek Yogurt Caesar Dressing
- Shaved Parmesan cheese
- Croutons (I use store-bought, but homemade croutons would be a great way to make this dish even better!)
Roasted Asparagus Recipe
Add your trimmed asparagus to a sheet pan and drizzle with olive oil. Sprinkle with salt and pepper and toss until well coated. Bake the asparagus at 425°F for 7-10 minutes, depending on the size of your stalks.
While the asparagus is roasting in the oven, whip up a quick batch of Greek Yogurt Caesar Dressing. If you prefer, you can use store bought Caesar dressing for a quick fix. The extra 5 minutes it takes to make the lighter homemade version is most definitely worth it though!
Greek Yogurt Caesar Dressing
Whisk the following ingredients together in a small bowl. One batch will make a substantial amount of sauce for one bunch of asparagus, so feel free to halve this if you prefer a lighter sauce on your vegetables.
- ¼ cup plain Greek yogurt
- 3 Tablespoons mayonnaise
- 2 Tablespoons grated Parmesan cheese
- 2 Tablespoons Dijon mustard
- ½ lemon, juiced
- 1 garlic clove, finely minced
- 1 teaspoon Worcestershire sauce
- salt, to taste
- fresh cracked pepper, to taste
How to Serve Roasted Asparagus
When the asparagus is done, remove from the oven and top with Caesar dressing, shaved Parmesan, croutons and some additional fresh cracked black pepper. If you are making at dinner for your family, just serve it all right up on the sheet pan.

Can I grill the Asparagus?
Absolutely! During the warmer months try grilling the asparagus instead of roasting it for even more flavor. Heat grill to high. In a large bowl or on a baking sheet, toss the asparagus with olive oil, salt and pepper. Grill the asparagus for 5-7 minutes until nice and charred. Serve it up with the Caesar toppings just as you would if you roasted it.

Ingredients
- 1 bunch asparagus
- olive oil
- salt and pepper
- ½ cup croutons
- 1/3 cup shaved Parmesan cheese
- 1 cup Greek Yogurt Caesar dressing
Instructions
- Preheat the oven to 425°F degrees.
- Trim the light ends of the asparagus off and add them to a baking sheet.
- Drizzle the asparagus with olive oil and sprinkle it with salt and pepper. Toss until well coated.
- Bake at 425°F for 7-10 minutes depending on the thickness of your asparagus spears.
- Remove the asparagus from the oven, drizzle with the desired amount of Caesar dressing, croutons, shaved Parmesan, and some freshly cracked black pepper. Enjoy!
