Roasted Garlic, Apple & Chicken Burgers are a juicy chicken burger paired with apples, goat cheese and a homemade Roasted Garlic & Lemon Dressing for an amazingly flavorful and healthy dinner idea.
I shared my Roasted Garlic & Lemon Dressing with you yesterday and I am still craving the amazing flavors from it. I may have dunked some apples with goat cheese in the dressing as a snack while I was waiting for my chicken burger to cook…it is just that good! That doesn’t however make the most well-rounded meal, so add this chicken burger with grated apple, thyme and roasted garlic to the mix and you will have a satisfying and delicious meal you will love.
Sometimes lean ground white meat can dry out easily, but the addition of grated apple helps keep it moist and flavorful. The balance of sweet apple with savory onion and roasted garlic pairs amazingly.
If you are bored with salads, which happens to the best of us every now and again, you could always serve this chicken burger up on a toasted bun. If you are still holding strong with your resolutions to eat better though, this burger is great on a bed of dressed greens and sliced Granny Smith apples.
Roasted Garlic, Apple & Chicken Burger
Ingredients
- 1/2 lb. lean ground chicken
- 1/2 apple shredded
- 1/4 c. onion finely chopped
- 1/2 head garlic roasted
- 1/2 tsp. thyme
- 1/4 tsp. salt
- 1/2 c. Roasted Garlic & Lemon Dressing
- 6 c. mixed greens
- 1 green apple sliced
- 4 oz. goat cheese soft chevre
Instructions
- In a medium bowl, mix the chicken, apple, onion, garlic, thyme and salt just until combined and form into 4 patties. In a skillet over medium-high heat, cook each patty for 3-4 minutes on each side until cooked through and no longer pink in the center.
- Meanwhile, toss the mixed greens with the dressing and divide among 6 plates. Top each salad with apple slices, a burger and goat cheese. Serve immediately.
