These buttermilk swim biscuits are absolutely amazing! I was introduced to the delicious butter swim biscuit trend by a friend and now I want to make them with allllllll the flavors and meals.
For these roasted garlic buttermilk biscuits, we are roasting garlic to sweet perfection in butter. As the butter and garlic cooks in a cast iron pan, the butter browns and you are left with the most amazing flavors. The brown butter and roasted garlic is topped with a simple mixture of flour, baking powder, salt, sugar and buttermilk.
It really is hard to believe the amazing texture of these biscuits comes from such a simple mix of ingredients. They raise in the oven to form a bread that is perfect for a side dish or slicing in half and topping with some pulled pork or shredded chipotle beef.
Roasted Garlic Bread
If you have never made roasted garlic, I highly recommend you give it a try. I hear many people say they don’t love garlic, but once you roast it, it becomes a sweeter and less pungent flavor that is spectacular. It’s right up there with caramelized onions for me!
It takes a little time to roast garlic, but if you make a bunch in one batch, you can store it refrigerated to add flavor to so many dishes like roasted garlic potato salad or roasted garlic & lemon dressing.
How to make roasted garlic biscuits
For these roasted garlic biscuits, you don’t have to make a batch of roasted garlic. You simply toss some cloves of garlic in a cast iron skillet with some butter. Cover it up and let it cook for 15-20 minutes. When it is cooked, you will be left with soft pieces of garlic cooked in brown butter.
Smash the garlic with a fork in the pan and stir into the butter before pouring the biscuit mixture over top. If there are any crispy pieces of garlic from smaller cloves, be sure to remove them before adding the biscuits.
Buttermilk Biscuits Recipe
I can’t get enough of how simple these buttermilk biscuits are. The recipe is as easy tossing the following dry ingredients in a bowl and mixing.
- 5 1/2 cups all-purpose flour
- 1 tablespoons baking powder
- 1 tablespoon granulated sugar
- 2 teaspoons salt
Stir in 4 cups of buttermilk just until it is mixed.
How to make butter swim biscuits
One your garlic has cooked and you have smashed it into a soft paste in the brown butter, carefully dollop the biscuits over the garlic butter mixture. Just be careful as the pan will be very hot still!
Using a pastry cutter or knife, slice the biscuits into 12-15 pieces. This will help score the biscuits, but more importantly it will allow the butter to get into the edges of the center biscuits.
Bake the biscuits at 450° for 20-30 minutes, or until the tops of the biscuits are golden brown and a toothpick inserted into the center comes out clean.
Can I cut the recipe in half?
This recipe makes a large batch, with 12-15 large biscuits. It’s fantastic for serving a large crowd or bringing to a barbecue or potluck. If you are wanting to make a smaller recipe for your family, you can easily cut the recipe in half. Use a 10 inch round cast iron pan or 9×9 square pan to bake the biscuits.

The possibilities are really endless when it comes to what you can serve with these biscuits. Frankly, these butter swim biscuits are the star of the show and you will just need to find a protein to throw on the side to make it a complete meal.
I served the biscuits with smoked pork loin and a bag of chopped salad. I love a good homemade salad, but I’m not about a quick back mix of salad for a quick and easy dinner.

Roasted Garlic Butter Swim Biscuits
Ingredients
Roasted Garlic
- 1 cup salted butter
- 6-8 cloves garlic
Biscuits
- 5 1/2 cups flour
- 3 tablespoons baking powder
- 1 tablespoon granulated sugar
- 2 teaspoons salt
- 4 cups buttermilk
Instructions
- Preheat your oven to 400°.
- Add the butter and garlic to a cast iron or oven safe 9×13 pan. Cover and cook for 20 minutes at 400°.
- Remove the pan from oven and increase the temperature to 450°.
- Smash the garlic with the back of a fork and whisk into butter. Remove any crispy pieces of garlic.
- Mix the biscuit dry ingredients in a large bowl and mix in buttermilk just until combined. Do not overwork.
- Spread the dough over the garlic butter and using a pastry cutter or knife, slice the biscuits into 12-15 pieces.
- Bake the biscuits at 450° for 20-30 minutes until tops are golden and a toothpick inserted in the center comes out clean.
- Allow the biscuits to rest for a 5-10 minutes before slicing and serving.
