Roasted Lemon Broccoli is a fantastically simple and healthy way to enjoy broccoli any time of year. Roasting broccoli brings out rich deep flavors unlike anything you will get from steaming or boiling it and the addition of lemon zest adds a bright freshness to the dish. Pair it with a seasoned chicken breast or a grilled steak for a simple and healthy weeknight meal.
I personally struggle to get green vegetables in my day to day diet. I am more than happy to eat things like tomatoes, onions, corn etc. but I struggle to get my daily dose of green veggies such as broccoli, asparagus, beans, etc. I will gladly east broccoli dipped in a thick creamy ranch sauce, but I’m pretty sure that negates most of the nutritional benefits at that point. Steaming and boiling broccoli don’t do much for me either, unless they are smothered in cheese. But again those darn nutritional benefits…
Roasting is my favorite way to enjoy the green guys, whether it is broccoli or asparagus. It brings out this rich flavor that you can’t seem to get any other way. Not only is it the most flavorful, but it’s actually healthy as well! It is simply tossed with some olive oil, salt, pepper and lemon zest and baked in the oven for simple and healthy side dish. I will gladly incorporate these roasted veggies in my meals if they taste this good and one serving alone gives me over 50% of my daily Vitamin C requirement!
Roasted Lemon Broccoli
Ingredients
- 1 large head broccoli
- 2 Tbsp. olive oil
- 2 tsp. lemon zest
- 2 Tbsp. Lemon juice
- sprinkle of salt and pepper
Instructions
- Break your broccoli head into medium florets. Toss in a large bowl with the remaining ingredients. Spread on a lined baking sheet and bake at 400° for 30-40 minutes.
