Let’s talk about Roasted Pineapple for a minute. This sweet goodness is totally my jam! This Roasted Pineapple & Chipotle Honey Ham is no exception. A smoked ham is brushed in a mixture of pineapple puree, butter, honey and chipotles in adobo for a rich and spicy flavor that melts into the ham as it cooks.
The beauty of this recipe is that there is no need to reduce the glaze on the stove top. If you are preparing a holiday meal, the last thing you need is an extra pot on the stove that you need to pay close attention to. A second coat of the pineapple, honey and chipotle glaze is added towards the end of the cooking time along with the fresh pineapple to begin roasted. The oven temperature is cranked up and the honey gets a nice glaze on the outsize and the pineapple are perfectly caramelized.

Roasted Pineapple & Chipotle Honey Ham
Ingredients
- 5-10 lb bone-in smoked ham
- 1 fresh pineapple peeled and cored
- 1 chipotle in adobo sauce
- 1/4 c. salted butter
- 1/3 c. honey
Instructions
- Preheat oven to 325°F.
- Add 1/2 c. diced fresh pineapple, chipotle in adobo, melted butter and honey to a blender or food processor. Blend until the mixture is smooth.
- Line a large roasting pan with layers of tinfoil and spray with non-stick spray.
- Trim the ham leaving 1/4" of fat. NOTE: It is important to leave just the right amount of fat. If you leave too much, the caramelized fat will be flabby. If you leave too little and the meat will dry out.
- Place the ham in the lined roasting pan. Coat the ham with 1/3 of the chipotle mixture and cover tightly with tinfoil.
- Bake the ham for 12-15 minutes per pound. (5lb ham = roughly 1 hour 10 lb ham = roughly 2 hours)
- Meanwhile, chop the remaining pineapple into 1 inch chunks. Toss it with 1/3 of the chipotle mixture.
- With about 20 minutes of cooking time remaining, remove the ham from the oven turn the temperature up to 450°F.
- Brush the remaining chipotle mixture over the ham and add the pineapple to the pan. Bake uncovered for 20-25 minutes or until the outside of the ham is caramelized and an internal thermometer reading reaches 135°F.

Thank you for this amazing recipe. I made this for our Easter lunch and it was a hit. The family called it the best ham ever and the non ham lovers enjoyed it as well. We like things spicy so I added a bit more chipotle and also added two morita chiles, which are a dried sweet and smoky chile. It was a great addition to the flavors in the glaze. We will definitely make again!

I was thinking of making this for Yule on Monday. I don’t have fresh pineapple but I have canned pineapple rings or canned crushed pineapple would one of them work? I was going to make a different recipe but saw this but one and thought it sounded better. I really prefer to not go back out to the store.

Fresh pineapple will be better, but canned pineapple can be substituted. Use the rings, not the crushed.

I just made this for a very delicious Christmas dinner. Just wonderful! Easy prep, and a tasty balance of flavours that weren’t too sweet (difficult to find for ham).
For sides, I added paprika-seasoned smashed potatoes, and green beans tossed with cranberries and toasted pecans. Yum!
