When you are making a nice simple piece of meat like Smoked Chicken Breasts or Pressure Cooker Pork Loin, it’s nice to have a go-to side dish. These roasted potatoes and green beans are a simple and delicious side that pairs well with just about any piece of meat.

Crispy Roasted Potato Recipe
Potatoes get a bad wrap sometimes but they are actually a nutrient dense vegetable that is a great wholesome side that is filling and delicious. These Crispy Roasted Potatoes made in the Air Fryer are a family favorite, but I wanted to add another green veggie to the table.
Adding green beans and potatoes to a baking dish along with red onions and olive oil results in crispy vegetables that have a simple and delicious flavor that the whole family will enjoy.
How to Make Roasted Green Beans & Potatoes
To get started, we are going to make a seasoned oil tossed with red onions. You will need the following ingredients.
- 1/4 cup olive oil
- 2 tablespoons garlic, minced
- 2 tablespoons dried rosemary
- 1 tablespoon dried parsley
- 1 small red onion, sliced
- salt and pepper to taste
Mix everything in a small bowl and set aside. Next up you will need to clean and chop the potatoes. Soak the potatoes and green beans in cold water.
Why do you soak potatoes and green beans in cold water
When you soak your beans and potatoes in cool water first, not only do you clean them, but you also help set up a better sear. The water washes off excess starches from the potatoes and the beans. (Yes, green beans also have high starch content) That helps prevent sogginess and allows better browning.
Just make sure to pat everything dry before you coat it all with oil.
What are the best potatoes for roasting?
You can of course use any sort of potato that you have handy. No matter the size of the potato, you want to create bite sized pieces. Cutting them into a uniform size will help them cook evenly. I usually opt for more of a wedge shape over square. This shape has more surface area to sear on the outside, while getting soft and fluffy on the inside.
Potatoes can be waxy or starchy, and the best potatoes for roasting are a little bit of both. Luckily, the best potatoes for roasting are the easiest usually to find in the market.
Yukon Gold, russet, and reds all work nicely and in every supermarket pretty much. These all have a nice starch content to help create a fluffy interior. They all have a thinner skin on the exterior that allows and easier browning. That also means a wonderful caramelization.
Tips & Tricks for cooking Potatoes & Green Beans
Potatoes and green beans have different cooking times. Therefore, you have to build the dish in steps. Don’t add the green beans until close to the potatoes being done or they will be overdone.
Let the potatoes get about ⅔ of the way through cooking, then add the green beans. The beans will cook reasonably fast. They will continue to cook next to the hot potatoes.
Make sure your oven is nice and hot. You want that high heat to sear the potatoes and beans quickly to result in a crispy outside and tender inside.
What to pair with potatoes and greens
I think many people instantly think steak when you say oven roasted potatoes. And there is nothing wrong with that. But roasted taters and green string beans go well with literally everything. So you might as well keep an open mind and look at a wide horizon of possibilities to serve with. Just about any meat pairs great with potatoes.

Roasted Potatoes & Green Beans
Ingredients
- 1 1/2 pounds Yukon potatoes
- 1 pound green bean trimmed
- 1/4 cup olive oil
- 2 tablespoons garlic minced
- 2 tablespoons dried rosemary
- 1 tablespoon dried parsley
- 1 small onion chopped
- salt and pepper to taste
Instructions
- Preheat the oven to 375°F.
- Chop potatoes into even sized pieces and add to a bowl with cold water. Add the green beans to a bowl with cold water as well. Soak potatoes and beans for about 10 minutes.
- In a small bowl, mix oil, salt, pepper, onion, garlic, rosemary and parsley together.
- Drain the potatoes and green beans. Transfer potatoes to a baking dish and pour 2/3 of the oil and onion mixture over the potatoes. Toss the potatoes so they are well coated with oil. Bake at 375°F for 30 minutes.
- Use the remaining 1/3 of oil and onion mixture to marinate green beans while the potatoes are in the oven.
- After 30 minutes, remove potatoes from the oven. Using oven mitts, carefully mix green beans in a baking dish. Be careful not to burn yourself. Bake for an additional 20 minutes.
- Remove the green beans and potatoes from the oven when potatoes are crispy. Serve immediately.
