Southwest Tortilla Crusted Tilapia Salad {Airfryer Recipe}
I had some Tortilla Crusted tilapia in my freezer and was dreaming up a way to use it in a low-carb dinner. I could have made the homemade version which is fantastic, but let’s be honest for a moment, sometimes in life we want the quick pre-made version with very little hassle. I buy the frozen Sea Cuisine tortilla crusted tilapia to have in a pinch sometimes and it is really pretty great! I considered just enjoying the fish with some Light Chipotle Tartar Sauce and a side of veggies but that just wasn’t calling my name at the time.
I then remembered I had some leftover Chipotle Lime Dressing I had whipped up a few days earlier and that sounded like the perfect pairing with the tilapia in this Southwest Tortilla Crusted Tilapia Salad! This dressing is one of my most popular recipes and with good reason. This creamy dressing has great depth of flavor and gets it’s creamy goodness from Greek yogurt.
I sprayed my fillet of tilapia with a little coconut oil pan spray and popped it in my new Airfryer that I adore. I set it to 15 minutes on 390° while I prepped my veggies and had this amazing dinner ready in no time!
I need to talk about the Airfryer for a moment. You may have heard lots of people talking them up lately. I had seen them a few months ago and eagerly added it to my Christmas wish list. My awesome sister gifted me one and I immediately went to work putting it to good use. From New York Strip Steaks to pre-made burritos and chicken patties, this little gizmo is a serious time saver and turns out the most amazingly crunchy food. My tilapia came out perfectly done with a wonderful crunch on the outside in just 15 minutes. It would have taken at least 30 minutes in a traditional oven with the pre-heating time.
While we are being lazy with the fish portion of this Southwest Tortilla Crusted Tilapia Salad, one thing you do not want to skip is the homemade Chipotle Lime Dressing. This easy salad dressing comes together in less than 5 minutes in your blender and it adds such a rich pop of flavor to the salad that you aren’t going to get from anything store-bought. With a Greek yogurt base, it is not only healthy but super creamy and delicious!
Southwest Tortilla Crusted Tilapia Salad {Airfryer Recipe}
Ingredients
- 6 c. mixed greens
- 1 c. cherry tomatoes
- 1/3 c. diced red onion
- 1 avocado
- 2 Tortilla Crusted Tilapia fillets I used Sea Cuisine frozen fillets
- 1/2 c. Chipotle Lime Dressing
Instructions
- Spray your frozen tilapia fillets with cooking spray on both sides. Place in your Airfryer and cook for 15-18 minutes at 390° until crispy. (If you don't have an Airfyer, you can bake the fillets in the oven according to the directions.)
- While the fish is baking, in two bowls, add half of the greens, tomatoes and red onion. Toss the mixture with the Chipotle Lime Dressing.
- Top the greens with the baked fish and sliced avocado. Serve immediately.

Ahhhh, I love this! The PERFECT lunch salad for me– flavorful, bright, pretty healthy, and most importantly totally delicious. Definitely trying this soon!
