Spicy Ham & Egg Sandwich
This Spicy Ham & Egg Sandwich is the ULTIMATE breakfast sandwich. Heck, I guess there is no reason this fantastic creation can only be enjoyed in the morning. With a stack of Honey Deli Ham, a couple of sunny side up eggs and sharp white cheddar cheese, you will have more than enough protein to fill you up and leave you satisfied! What better way to start the day than with this delicious sandwich with a spicy twist.
The spice is added to this sandwich by adding paprika, cayenne pepper and garlic to a mayonnaise and Dijon mixture. My husband is obsessed with this homemade spicy mayo. He literally wants me to put it on every sandwich I make him from now on!
The bread is slathered with a generous helping of spicy mayo and topped with lightly sautéed spinach, extra sharp white cheddar, two sunny side up eggs and a pile of Honey Deli Ham. A bit of butter on the outside toasts it up for a warm sandwich oozing with cheese and egg yolks.
My dad used to make us basic egg sandwiches for breakfast after church each Sunday and we loved them! This Spicy Ham & Egg Sandwich takes it to the next level though. Instead of overcooked eggs (sorry Dad!), a slice of processed cheese and white bread, we have a combinations of flavors that will make you drool!
The sweetness from the ham balances the richness from the cheese and egg for the perfect bite. Now I must admit, you probably won’t get that perfect bite from holding onto this sandwich. This bad boy is better enjoyed with a fork and knife! Sandwiches are normally enjoyed as a quick grab & go option, but there is no reason you can’t elevate your sandwich for a delectable sit-down meal.
Spicy Ham & Egg Sandwich
Ingredients
- 2 slices bread
- 2 Tbsp. butter softened
- 4 slices Honey Deli Ham
- 1 c. baby spinach
- Pinch of salt
- 2 eggs
- 2 oz. extra sharp white cheddar
- 2 Tbsp. mayonnaise
- 2 tsp. Dijon mustard
- 1 tsp. paprika
- ¼ tsp. cayenne pepper
- ½ tsp. garlic powder
Instructions
- In a small bowl, combine the mayonnaise, Dijon and spices. Spread the mixture onto one piece of bread and top with the ham and cheese.
- Meanwhile, crack two eggs into a sprayed skillet over medium heat. Cook covered for about 2 minutes or until the whites are completely opaque. Place the eggs on top of the ham and cheese.
- To that same skillet, add the spinach with a pinch of salt. Cook for 30-60 seconds or just until wilted. Place the spinach on top of the eggs and top with a slice of bread. Butter the outsides of the sandwich and place it in the skillet over low heat. Cook on each side until browned. Remove from the heat and enjoy immediately.
