Skinny Taco Dip
My family LOVES taco dip. If someone brings a plate of taco dip to a family gathering, it literally disappears within 10 minutes. Last summer, at our Family Summer Olympics, the taco dip was brought out and it basically looked like a food eating contest with how fast the guys were inhaling that stuff.
It’s delicious, but at the end of the day, it’s not all that healthy with cream cheese, sour cream and shredded cheese being the main ingredients. That is why I was so excited to find a recipe for skinny taco dip from Yellow Bliss Road.
Healthy Dip Recipe
I love using Greek Yogurt in place of sour cream in lots of my recipes, such as this Roasted Red Pepper Ranch Dip or this Light Chipotle Ranch Chicken Wrap. I’m not going to lie though, in some instances I attempt to swap Greek yogurt and it takes on too much of a tangy taste that just isn’t as good as it’s sour cream counterpart. I was worried that would happen with this Skinny Taco Dip because there aren’t many ingredients to disguise the yogurt.
Dip with Avocado
Needless to say, I was pleasantly surprised and I couldn’t even detect the fact that there was Greek yogurt in this dip. Another thing I loved about this recipe is that it blended salsa into the cream cheese mixture. This is a fantastic way to lighten up the otherwise heavy mixture as well as adding great flavor!
Avocados are another great addition that our family has historically never thought to add to taco dip, but they are a nutrient rich food that adds an extra layer of richness I love! Another great dip using this healthy superfood is Avocado Feta Dip.
I opted to leave out the black olives that were included in the original recipe, seeing they just aren’t my thing. You could easily add them on top as well anything else you thing would pair well. Black beans, jalapenos or bell peppers would all be great additions to try out!
I ended up halving the recipe, because I thought it would just be my husband and I enjoying this snack. Half a batch of the original recipe, still make this large plate, so it was more than enough to share with my nephews and brothers who happened to stop by the house!
Lightened Up Dip
This was the real test, having the guys who live for the full fat version try out this Skinny Taco Dip. They all jumped at the chance to snack on some taco dip in the afternoon, especially seeing they had just spend a couple hours rock picking. I warned my brother that it was “skinny” and he gave me a bit of side eye.
Nevertheless he grabbed a bag of chips and dove in. He responded with my family’s classic, “Hey, this is actually good!”. Really?! After a certain point, you would think they would stop being surprised that something a bit out of the norm can be good. As you can see from the picture above, my goofy nephew though it was great as well!
