We are continuing to plug along on the house remodel, but we had our first real hiccup. Cabinets were supposed to be installed yesterday but I got a call at 8am that said they were running behind and wouldn’t be coming until next week. The problem with that is, now the people who are installing the quartz counters can’t come and template for them until March!
I can’t say I was impressed with such short notice, you know, the DAY they were suppose to be there! So now it looks like our moving date got pushed back a week and we will likely be living there for a week or two with no counters. My husband is starting to get burnt out with the whole process and I can’t blame him. It is just time this is all done and we can be in our nice new house already!
Winter Fruit & Shrimp Salad
Ingredients
- 1/2 lb. shrimp cooked
- 1 c. orange segments
- 1/2 c. pomegranate seeds
- 2 oz. goat cheese soft type
- 12 c. mixed greens
- 1 c. pomegranat balsamic dressing
Instructions
- Tess the mixed greens with the dressing and top with the remaining ingredients. Serve immediately.
