Pulled Pork Burrito

This simple and delicious pulled pork burrito is made with leftover pulled pork, rice, beans, sour cream, cheese and lettuce for an easy packed lunch idea or quick dinner the whole family will enjoy.

Ingredients

  • 3 cups pulled pork in sauce
  • 6 large flour tortillas
  • Lettuce
  • 3/4 cup sour cream
  • 1 ½ cups rice
  • 1 ½ cups shredded cheese (Manchego or cheddar)
  • OPTIONAL - Fresh cilantro

Instructions

  1. Place the tortillas, one at a time, on a plate and heat in the microwave for a 10 seconds.
  2. Top each tortilla with lettuce, 1/4 cup rice, 1/4 cup cheese, 2 Tablespoons sour cream, 1/2 cup 1/2 cup pulled pork, cilantro and a little bit more lettuce.
  3. Fold the two sides of a tortilla towards the center. Carefully wrap in a log, while tucking the sides in for a good seal. Roll up tightly but not too much. Repeat with all tortillas.
  4. Serve immediately, or wrap tightly and store refrigerated up to 24 hours.

Notes

If your pulled pork doesn't have any sauce on it, add a drizzle of your favorite BBQ sauce.
