Pizza Rice Muffins

cooked rice
white or brown

cups
shredded mozzarella cheese
6
ounce
bag pepperoni
quartered*

onion flakes

parsley flakes

teaspoon
oregano

teaspoons
garlic salt

eggs
whisked

cup
grated Parmesan cheese
1/2
cup
sliced olives

pizza sauce for serving
Instructions
Preheat oven to 375
°
.
In a large bowl combine all of the ingredients and mix until well combined.*
Divide the mixture evenly between 6 greased muffin cups. Press the mixture into the tins with the back of the spoons.
Place the muffin tin on top of a baking sheet and bake at 375° for 16-18 minutes until they are lightly golden brown on the top.
Remove from the oven and release from the pan by swiping a butter knife around the edges. Serve with warmed pizza sauce.
Notes
*Microwave the pepperoni in a microwave safe bowl for 1 minute to remove some of the grease before adding to the other ingredients.
